    Coffee Cake

    I misplaced my coffee cake recipe. I know that it had sour cream and it had a cinnamon/brown sugar mixure in the middle of the cake. Can anyone help me with this recipe?

    1874 STONEHOUSE CAKE

     

    Serves:  12

    Effort:  easy

    Comments:  This is the coffecake that is served at the Bed & Breakfast "1874 Stonehouse ".  We had it while staying there Sept 23,24, & 25,   1997 The B&B is located in Cottonwood Falls, Kansas 

     

    Ingredients:

    FILLING:

    1/2 c. (just a little under) sugar

    1 T. cinnamon

    1/2 c. finely chopped pecans

     

    CAKE:

    1 box yellow cake mix

    4 eggs

    1 c. sour cream

    1/4 c. oil

    1 pkg. instant vanilla pudding mix

    3/4 c. water

    1 t. vanilla

    1/2 -1 c. fresh or frozen fruit (thawed), if desired

     

    Instructions:

    Preheat oven to 350

    Mix filling & set aside.

    Mix together all cake ingredients and beat  until light & fluffy (about 3 min.).

    Generously grease a bundt pan & pour in 1/2 cake batter.

    Slightly hollow the center of the cake & pour in filling. 

    At this point you made add the fruit.

    Pour in the rest of the cake batter.

    Bake for 1 hour.

    Remove and cool on a rack until completely cool then invert onto a cake plate.

    Glaze if desired.

    This cake may be kept in the pan for up to 3 days if covered with foil.

    Sour Cream Coffee Cake

    Topping:1 C pecans chopped small   1/3 C brown sugar¼ C melted butter1 t cinnamon¼ C white sugarMix well and set asideCake:2 C sifted flour½ C soft shortening1 t baking powder1 C sugar1 t baking soda1 t vanilla extract½ t salt1 C sour cream2 eggsHeat oven to 350*.  Grease 9” spring form pan well.  Sift flour, baking powder, baking soda and salt together into mixing bowl.  Put eggs, shortening, sugar and vanilla into bowl and mix until smooth.  Gradually add half the sour cream and half the flour mixture.  Mix until smooth.  Repeat with remaining sour cream and flour. Put half the cake batter into prepared pan, top with half the topping mixture, spreading as evenly as possible.  Repeat with remaining batter and topping.  Bake 45 to 55 minutes or until cake tester comes out clean.  Cool 10 minutes before removing from pan.

    As usual, TOHBB to the rescue. When I came to spend a little time here this evening, I was wondering what to do with the sour cream I HAVE to use SOON.

    Jane Durham’s Sour Cream Coffee Cake

    ½ cup softened butter or margarine
    1 cup sugar
    1 teaspoon vanilla extract
    2 eggs
    2 cups flour
    1 teaspoon baking powder
    1 teaspoon baking soda
    ½ teaspoon salt
    1 cup sour cream

    Topping Mixture

    ¾ cups brown sugar
    3 Tablespoons flour
    2 teaspoons cinnamon
    1 teaspoon vanilla
    3 Tablespoons margarine, melted
    ½ cup chopped walnuts or pecans

    In a small bowl combine the brown sugar, 3 Tablespoons flour, and cinnamon. Stir in the 3 Tablespoons of melted margarine, and then add the chopped nuts.

    Cream together the butter, sugar and vanilla until light. Stir in the eggs, one at a time, and then beat until light and fluffy. Combine the dry ingredients, and add alternately with the sour cream to the creamed mixture. Beat well after each addition.

    Pour ½ of the batter into a greased and floured 9x13 pan or a 10” tube pan. Sprinkle with ½ of the topping mixture. Spread the remaining batter over the top and sprinkle with the remaining topping mixture.

    Bake in a preheated 350 degree often for 25-30 minutes or until the cake is lightly browned and tests done.

    Here is the one that I use all the time

    Overnight coffee cake

    3/4 cup butter softened
    1 cup sugar
    2 eggs
    2 cups all purpose flour
    1 teaspoon baking soda
    1 teaspoon ground nutmeg
    1/2 teaspoon salt
    1 cup 8-oz sour cream
    3/4 cup packed brown sugar
    1/2 cup chopped pecans or walnuts
    1 teaspoon ground cinnamon
    1 1/2 cups confectioners' sugar
    3 tablespoons milk

    In a large mixing bowl, cream butter and sugar. Add eggs one at a time, beating well after each. Combine the flour, baking soda, nutmeg, and salt, add to the creamed mixture alternately with sour cream. Pour into a 13x9x2 inch baking dish.
    In a small bowl, combine the brown sugar, pecans, and cinnamon, sprinkle over coffee cake. Cover and refrigerate overnight
    Remove 30 min. before baking. Bake uncovered for 35-40 min. Cool on rack for 10 minutes. Combine the confectioners' sugar and milk and drizzle on warm coffee cake.
    Yield:12-15 servings
