    looking for a recipe

    Hi!  I'm new to Taste of Home.  My husband is of Mexican decent and growing up he had tamale soup.  I can't find a recipe anywhere for this.  Can someone help me?  My email address is larodriguez@nmax.net.

    Tamale Soup

    Ingredients
    1 pound ground beef
    1 chopped onion
    1 chopped green pepper
    2 tablespoons oil
    1 15-ounce can corn, drained
    2 beef bouillon cubes
    2 cups water
    1 tablespoon chili powder
    1 teaspoon cumin (optional)
    1 teaspoon salt
    1 15-ounce can diced tomatoes
    1 15-ounce can tomato sauce
    1 15-ounce can pinto beans, drained
    10 fresh tamales, frozen (see “Tips”)
    Grated cheese
    Instructions
    Brown beef with onion and pepper in oil in a large skillet. Drain off grease. Add corn and bouillon that has been dissolved in water. Add other ingredients, except tamales and cheese. Cook on low heat until flavors are blended. Thirty minutes before serving, cut the frozen tamales into one-inch pieces and add to soup. If tamales are not frozen, they will fall apart after a short time. Top servings with cheese and serve with tortilla chips.

    Tips From Our Test Kitchen: If fresh tamales are not available, use canned. Drain, remove paper, and slice into one-inch pieces. Add at last minute to soup to heat through. Makes 6 to 8 bowls.

  • 1 cup onion-->-->, chopped
  • 1/2 cup green pepper-->--> or red pepperred pepper-->red peppers-->, diced
  • 2 cups celery-->-->, chopped
  • 1 tablespoon dried chives-->-->
  • 1 teaspoon celery salt-->celery salt-->
  • 3 cloves garlic-->-->, minced
  • 1 tablespoon tamari-->-->
  • 1/4 teaspoon cayenne pepper-->-->
  • 2 teaspoons ground cumin-->-->
  • 1/3 cup olive oil-->-->
  • 3/4 cup yellow cornmeal-->-->
  • 1 tablespoon bacon bit-->--> (optional)
  • salt and peppersalt and pepper-->salt and pepper-->

    Directions

      Soak beans as directed on the back of the package.

      In a 5-6 quart pot, bring water, pinto beans, and bay leaf to a boil.

      Simmer, covered for about 20 minutes Add onion, pepper, celery, chives, celery salt, garlic, tamari, cayenne, cumin, and olive oil.

      Bring again to boil, then reduce heat and simmer, covered until the beans are tender In blender, blend 2 cups of the hot soup broth with the corn meal and the bacon bits until smooth.

      Sir constantly, adding cornmeal mixture gradually into the soup.

      Simmer and continue stirring, for about 10 minutes, or until cornmeal is cooked (soup will get thick).

      Add seasonings to taste.

      Serve.

    Hi Lori,

    Welcome to TOH.  I'm pretty new too.  My family and I love mexican food, and we've never heard of tamale soup.  That sounds yummy.  We'll have to give this a try.  I make taco soup that's really good, but my husband loves tamales, so I'm sure he will love this tamale soup too.
