    Hello everyone!

     

    Well it is great to be back over at Recipes! I hope we have some new people join us and really hope to see some old friends popping back in!!! (And you know who you are, you have been missed!). So for many reasons we have decided to come back and it is going to be great!

     

    And we look forward to hearing from you Nancy!!!!!!! Hope you are all doing well!

     

    This week lets share some of those BBQ/summer time favorites! And I can use some, it has been snowing for 3 days now.......................and we were doing so well. Things should start to turn around in a few days. Hope your weekend weather was better then mine.

    Well we will see how is goes over here. It should help add to the recipes board and make our group busier! Its a good thing all around!  Big Smile

     

    Here is a great recipe that is a must try if you like Salmon.

     

    Rum Smoked Salmon

     

    1 salmon fillet ( about 2 lbs)

    1 cup of rum

    1 cup of firmly packed brown sugar

    1/2 cup of course salt

    1 tbsp of black pepper

    Pour the rum over the salmon and let it marinate for 15 minutes.

    Drain and blot the salmon.

    Make the cure:

    Combine the brown sugar, salt and pepper in a mixing bowl and mix well with your fingers. Spread one third of the cure on the bottom of the baking dish. Lay the salmon on top and sprinkle the remaining cure on thop, patting it onto the fish with your fingertips. Cover the salmon with plastic wrap and let cure in the refrigerator for 4 hours.

    Prepare smoker to 220*

    Rinse the cure from the salmon and blot dry with papertowels. Lightly sprinkle with 2 tbsps of brown sugar.

    Place in smoker and smoke until done. It will feel firm and break into clean flakes.

    Transfer to a rack to cool. When cool wrap well and refrigerate unti cold. Serve cold or at roomtemperature. Smoked salmon will keep in the refrigerator for 3-5 days.

    This was WONDERFUL!!!!! If you enjoy smoked fish I highly recommend this recipe.

    Dry Spice Barbecue Rub
    Yield: 10
    Spice Rubs are a great way to flavour any meat or fish that will be grilled or roasted. This version was inspired by my first encounter with Bison meat at the Three Bars Ranch in British Columbia. As Chef Stephan Ineichan and I wrestled with the beast we decided to try a dry rub and a wet marinade. They worked and the bison was amazing. Try a spice rub at your next barbecue!
    Timing Hints: This rub can be made in advance and will store well in a tightly sealed jar.
    Ingredients:
    Dry Spice Barbecue Rub
    1/2 cup chili, powder
    2 tbsp ground cumin
    2 tbsp paprika
    2 tbsp dry mustard
    2 tbsp brown sugar
    1 tbsp salt

    Directions:
    Dry Spice Barbecue Rub
    Mix all the ingredients together. Store in a jar with a tight-fitting lid. When you’re ready to barbecue just rub the spice mix all over the meat. To build more flavour let the meat rest for a few hours or even overnight then grill away!

     I made it!  For some reason the link you posted in M2M took me back to last weeks posts - not sure why.

     Snow?  YUCK!  Where are you?  It is 51 degrees here and looks like it is going to be a nice day.  We did have another aftershock from the earthquake about midnight - this one measured 4.5 on the scale and was enough to wake me up (yes, I sleep pretty light).  I wish they would stop.  It is kind of scary because you don't know when they are going to happen or how bad they will be.  At least with tornados or thunderstorms, they can be tracked on maps and you have an idea when they will hit.

    I don't have any great bbq recipes, but I do have an awesome German potato salad recipe that I like to serve when I grill steaks.  I will have to look for it and post it later.  I got it from a german girl that I worked with many years ago.  I am so glad I got to know her!

    My other favorite thing to make when grilling is potato packets - I usually put a couple pats of butter on my foil, sprinkle with garlic, add my potatoes, some bacon or sausage, then wrap them up and throw them on the grill.  You can also add peppers/onions.  Yum....

    Well, gotta go wrangle son down and get him dressed.  He is playing with Chester and laughing like crazy!

    Thanks for the link Redawna!  It's been a long time!  I've missed you all!  Hope all is going well!  We pick up DD's from college this week.  Can't believe they will be done with their 1st yr already!  They really loved it!  I miss them so much!  (I had no prob with the link)

    ***I have only made this in the oven once!  Then I made it as a marinade!  And grill it!  OMGosh!  This is so good!  I made a ton of it for DD's graduation party last year!  I got so many requests for the recipe, I would have made a fortune selling it!  Wink LOL!  I've even made the marinade put the chicken in freezer bags and put in freezer.  Then take out and put in fridge.  When you are ready to grill you have your meat ready in a flash!

          this is a WONDERFUL recipe from my friend betheny. This is an old review I did of it (obviously, considering the remarks about my DH) I made this last week and we loved it, even my DH who does not like to try new things. I made half of it my usual way, just pouring barbecue sauce on top and baking it and half this way. The half I made this way was gone. I like that it uses all ingredients I always have on hand. Really good flavor. I used one package of legs and one package of thighs (small packages), as we don't like white meat so I usually don't buy whole cut up chickens.
    This is delicious!!!!!!


          Oven Barbecued Chicken (betheny)

          1 large cut up frying chicken
          Sauce:
          3 TBSP catsup
          2 TBSP vinegar
          2 TBSP Worcestershire sauce
          4 TBSP water
          3 TBSP cooking oil
          3 TBSP brown sugar
          1 tsp salt
          1 tsp mustard
          1 tsp paprika
          1/2 tsp chili powder

          Season chicken with salt and pepr adn place in roasting pan. Combine
    sauce and spread on chicken pieces, making sure each one is basted. Bake
    uncovered for 2 hours, basting often, in 350 degree oven. I think I only
    cooked mine about an hour. It was just right.

    Good Monday Morning everyone!  I hope you all had a good weekend.  We had the a great weekend.  Gavin got to sleep over on Saturday night so that makes a weekend wonderful. 

    Redawna, thanks for starting us off here.  This should be great.  I like to grill a lot in the summer but don't really follow any "recipes".  I'll look around and see what I can come up with though.  Thanks for the recipes.   I still have to break out the smoker.

    Kelly,  I've got the try potatoes on the grill - that sounds yummy.  So I guess DS & Chester are getting along great - how cute. 

    Patty, glad to see you popping in!  The chicken recipe looks really good too.  I think we'll try it this weekend.  Good to hear the girls are home - I'm sure you are happy about that.  I can't believe how fast that year went.

    Hi Redawna and all the wonderful ladies, I've missed you! It's not that we were isolated for me, part of it is this new format too. So slow and combursome (sp) for my dial up.     Patty, I haven't tried your cupcake recipe, but will soon, just for dh & myself.

     

    This is one of my favorites. I make mine smaller, plus I wasn't using buns with it. BUT... I found a new secret from the bb. English Muffins. My gosh are those great. As one gal described it~  all the nooks & crannies just  soak up the juices! Plus not so much bread. I did just try whole grain muffins and definitely not the same, but will give it another chance.Try it.

     

    BACON WRAPPED HAMBURGERS(Source: Jan, allrecipes.com)
    1/2 cup shredded Cheddar cheese
    1 tablespoon grated Parmesan cheese1 small onion, chopped

    1 egg
    1 tablespoon ketchup
    1 tablespoon Worcestershire sauce
    1/2 teaspoon salt
    1/8 teaspoon pepper
    1 pound ground beef
    6 slices bacon (I would highly recommend cutting bacon in half or use center cut, lean)
    6 hamburger buns, split

    What you do: Preheat a grill for high heat. *I cooked these on the stove. When only using 1/2 slice of bacon, I don’t use toothpicks and place the 2 edges side down in pan. It will hold bacon in place.
    In a large bowl, mix the Cheddar cheese, Parmesan cheese, onion, egg, ketchup, Worcestershire sauce, salt and pepper. Crumble in the ground beef, and mix by hand. Form into 6 patties, and wrap a slice of bacon around each one. Secure bacon with toothpicks.

    BARBEQUE ROASTED SALMON(Source: Chef Victoria’s cooking class) 1/4 cup pineapple juice2 tbsp lemon juice, fresh4 (6 oz) salmon filet2 tbsp brown sugar1 tbsp chili powder2 tsp lemon rind, grated3/4 tsp cumin, ground1/2 tsp salt1/4 tsp cinnamon, ground Combine first 3 ingredients in a Ziploc bag; seal and marinate in refrigerator for 1 hour, turning occasionally. Note: do not marinate longer, it will cook the fish.Preheat oven to 400 degrees.Remove fish from bag; discard marinade. Combine sugar through cinnamon in a bowl. Rub over fish. (During the demonstration she suggested and we did put all of rub on top of fish) Place on a baking dish coated with cooking spray. (This was still hard to clean. I suggest covering baking dish with foil and then coat with spray) Bake at 400 for 12 minutes or until fish flakes easily when tested with a fork. Serve with lemon, if desired. Note: could use rub on pork loin or chicken.Note: she paired with Wilted Spinach and pine nuts (under vegetable section)She also paired with Chardonnay or Pinot Grigio Wine.Nutrition summary: calories: 301 (43% from fat), total fat: 14.42, saturated fat: 2.45,Cholesterol: 111, sodium: 385, carbohydrates: 7.6, protein: 35.23

    Beer Smoked Ribs

    6 pounds pork spare ribs – or 2 side ribs (2.7 kg)

    2 (12oz) bottle lager (680ml)

    2 tablespoons chili powder (30ml)

    3 tablespoons lemon juice (45ml)

    3 teaspoons minced garlic (3 cloves approximately) (15ml)

    2 teaspoons ground cumin (10ml)

    2 crumbled bay leaves

    2 teaspoons onion powder (10ml)

    1/4 cup olive oil (60ml)

    2 teaspoons cracked black pepper (10ml)

    2 teaspoons kosher salt (10ml)

    6 cups of mesquite wood chips (1.5litre)

    Directions:

    Beer Smoked Ribs

    Pull the membrane off the back of the ribs using pliers dedicated for the kitchen. Cut ribs into 8-rib portions. Place ribs in a large resealable plastic bag set in a large shallow dish

    In a medium bowl combine 1 bottle of beer, lemon juice, crumble bay leaves, celery salt, garlic, onion salt, cumin, and chili powder. Pour overtop of the ribs and seal the bag. Toss to coat evenly and refrigerate overnight.

    The next day, place 4 cups (1litre) of mesquite wood chips into a bowl of cold water to soak for 1 hour. Reserve 2 cups (500ml) of dry wood chips.

    Remove ribs from refrigerator. Drain ribs and discard the marinade. Pat the ribs dry of the excess liquid from the marinade. Season with salt and pepper.

    Prepare smoke pouch. To build a smoke pouch, drain 2 cups (500ml) of the wet wood chips and squeeze excess water out. Spread wet wood chips on a large piece of aluminum foil. Place 1 cup (250ml) of dry wood chips on top and mix them together. Close the foil around the chips to make a sealed foil package. Use a fork to puncture holes in the top and bottom of the foil pack to allow the smoke to flow through and infuse the meat. Repeat to make second smoke pouch.

    Prepare the barbecue for indirect grilling and place a drip pan under one side of the grill (the side that will have no heat directly underneath it). Fill the drip pan with beer. Preheat the barbecue to 220ºF/110ºC using heat only on one side. Place one smoke pouch directly over the heat source. Close the lid and wait for smoke. Once BBQ is smoking, place the ribs on the side of the BBQ without direct heat. Smoke the ribs over indirect heat for 2 1/2 hours, replacing the smoke pouch once.

    Pour extra beer into drip pan, which should now be empty when replacing the smoke pouch.

    Remove ribs from grill. Tent with foil and allow them to rest for 15 minutes.

    BULLS EYE BARBECUE SAUCE:

     

     

    1 c water

    1 tsp salt

    3/4 c light corn syrup

    1/4 tsp onion powder

    1/2 c tomato paste

    1/4 tsp ground black pepper

    2/3 c white vinegar

    1/4 tsp dry mustard

    1/3 c dark brown sugar ( I used light since that's all I had)

    1/8 tsp paprika

    3 Tablespoons of molasses

    1/8 tsp garlic powder

    1 1/4 tsp liquid smoke

    dash of cayenne pepper

    In a medium saucepan combine all ingredients over med/high - high heat. Whisk until smooth.

    Bring mixture to a boil and then reduce heat and simmer uncovered for 45 mins or until thick.

    Can use right away (at desired thickness) or allow to cool and store in fridge for future use.

    Carolina Style Barbecued Chicken

    2 tblsps vegetable oil
    8 chicken thighs
    1 medium onion, finely chopped
    1 medium green bell pepper, finely chopped
    1 cup frozen lemonade concentrate, thawed
    1 cup ketchup
    1/2 cup butter or margarine, melted
    2 tsps salt
    1 tsp hot pepper sauce
    1 tsp garlic powder
    1/2 tsp cayenne pepper
    3 tblsps cider vinegar

    Preheat the grill. Heat oil in a large skillet over medium heat. Add chicken. Cook until chicken is browned, about 3 minutes per side. Remove skillet from heat.

    Combine the onion, bell pepper and lemonade concentrate in a medium saucepan. Stir in ketchup and butter. Add salt, hot pepper sauce, garlic powder, cayenne pepper and vinegar; mix well.

    Bring sauce to a boil; reduce heat. Cook, stirring frequently, until slightly thickened, about 5 minutes. Reserve half of sauce. Place chicken on grill; baste with remaining sauce.

    Grill chicken, turning frequently and basting with sauce, until cooked through, about 10 minutes. Serve reserved sauce with chicken

    Hey everyone!

    It is nasty on the roads, glad to see a snow plow when I was coming home, the big corner here is icing up badly. We are under a heavy snowfall warning……… lovely.

    So glad to get a new week underway! It is so great seeing some familiar faces!

    Hi Kelly, I am up north in Alberta! And it has been gorgeous until Friday. I even set the greenhouse up but the plants are still in my basement for at least another week now. Love to see you potato salad recipe when you have a chance. I also make the potato packs for the BBQ. Did DH hear about the earthquake? He will be home soon! Hope you and DS have a great day!

    Hi Sue, sounds like you had a great weekend! Definitely break out that smoker and get some rum for the salmon recipe I posted, it is one of the best recipes my DH has ever prepared, that is if you enjoy salmon. And you don’t have to be a big fish fan to enjoy that recipe, its that good!

    It is Intervention Monday! But what in the world are we going to watch now that Biggest Loser is over? I hope a new season starts soon! And for LOST fans a new episode finally this week!

    I have to go and dig around in the freezer for supper, not sure what to make. I have had stomach problems the past 2 night so I will be eating very light tonight I the hopes I don’t get sick. I will go to the Dr. next week and get it checked out.

    I hope everyone has a great day! I am going to look for more recipes.
