We had a nice weekend - got a lot of much-needed rain on & off all weekend. Lost power saturday night for a few hours - really bad storm came through. We were able to get out to the park saturday & sunday, which was nice. The temps were in the 80's.
did some cooking & freezing this weekend, trying to get the freezer full with a few things. I made a batch of chili, lasagna and beef stew. Also put some chicken in marinades & froze those uncooked.
Also made a 3 Bean Salad, which I didn't freeze but it's DH's favorite. I have some of that for lunch today. This time I cut the amount of sugar down in the dressing, didn't taste bad but dh says it's not the same *sigh*. We need to cut some sugar out of our diet and I just won't be able to make this much if I have to do it w/ the full amount. Oh well. We'll enjoy it more if it's a treat, right?!? LOL!!! Here is the recipe:
3 Bean Salad
1/2 c. Cider Vinegar
1/2 c. Vegetable Oil
1/2 c. White Sugar (I used 1/4c this time)
1 tsp. Celery Seed
1/2 tsp. Salt (I use kosher)
Fresh Ground Black Pepper
Combine in a small sauce pan, cook over medium heat, stirring frequently, until sugar disolves & mixture starts to boil/simmer. About 4-5 minutes.
In a large non-reactive bowl (no metal) combine the following:
15 oz. can Cut Wax Beans, drained
15 oz. can Cut Green Beans, drained
15 oz. can Kidney Beans, drained & rinsed
1 small Red Onion, sliced thin & rings separated
(at super target I found cans of green & wax beans already mixed in 15 ozx cans so I used two of those)
Pour dressing over beans, stir well. Let sit for 30 minutes to cool. Cover and refrigerate for 6-24 hours (the longer it sits the better it tastes!!). Serve with a slotted spoon
