    Cherry cheese cake tarts

    This was my mother's recipe--but can not find it.  Anyone have it?  It was ade in a smal cupcake pan.

    Mini Cherry Cheesecake Tarts

    4 (8 oz.) pkgs. cream cheese, softened

    1 ½ c. sugar

    4 eggs

    2 tsp. vanilla extract

    36 vanilla wafers

    1 can cherry pie filling (or peach, strawberry or blueberry pie filling)

    Line 36 muffin cups with paper liners. Place a vanilla wafer in each paper liner. Set aside. Beat cream cheese until creamy. Gradually add sugar, beating until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in vanilla. Spoon cream cheese mixture over wafers, filling lined muffin cups ¾ full. Bake at 350 deg. For 15 minutes. Leave in muffin pans and chill several hours. To serve, top each with a couple teaspoons of pie filling. Makes 36 mini cheesecakes.
