Stuffed Yellow Squash
1 lb ground chuck
1 1/2 cups chopped onion
salt and pepper to taste
1 6 oz can tomato paste
1 1/2 tbs sugar
1/4 cup water
1/4 lb Gruyere cheese, chopped
6 medium yellow straight neck squash
Brown ground chuck and onion with salt and pepper. Stir in tomato paste, sugar and water. Simmer 10 minutes. Remove from heat and stir in cheese. Cut squash into halves lengthwise; scoop out seeds with a spoon and discard. Place squash halves cut side in in a 9x13 baking dish and sprinkle with salt and pepper. Spoon in meat mixture. Cover pan with foil and bake for 35 minutes at 375 degrees.
