    Rec. Low-Fat Chorizo (Used Ground Turkey) (5/10/08)

    I've never purchased real chorizo because of the high fat content, now I'll try this recipe and be able to make all those yummy sounding recipes using chorizo.

    This recipe need to be credited to a little recipe book I have titled "Low Fat Mexican Recipes." It has very good recipes that I use regularly. I'm putting my favorites on Zaar for safe keeping. This is great scrambled eggs or potatoes.

    10 min | 10 min prep | SERVES 6
    1     lb ground chicken or ground turkey
    1     teaspoon crushed red pepper flakes
    1     teaspoon dried chipotle chiles, ground
    1     tablespoon chili powder
    1/4     teaspoon cumin
    1/2     teaspoon garlic powder
    1     teaspoon salt
    1/2     teaspoon pepper
    3     tablespoons vinegar

       1. Combine all ingredients in a glass bowl. Mix thoroughly.
       2. Cover and refrigerate for several hours.
       3. When ready to use, fry in a hot skillet with a small amount of oil.

    Thank you. This sounds wonderful. DH and I are big Mexican fans but I have only used chorizo twice because of all the fat in it. This is perfect.

    Thanks so much Chefly. I love chorizo and like the rest of you, eat it sparingly because of the fat. I did have a wonderful Mexican omelet with chorizo in it this past week while Diana and I were in northern Michigan for the week. Diana won't eat it, so I don't use it in recipes, but i think I'll make up a few pounds of this and freeze it for when my daughter and son in law join us up at the lake for weekends. They will both like omelets with this in it or maybe even mixed half and half with ground sirloin for when we make burgers over the fire. Diana love chili so I always make it mild enough for her to eat, but I can brown up and scramble a pound of this to use as a topper for my bowl! :-) I bet I can get away with mixing some in with taco meat when I cook it up too.

     John, I love your idea of browning it and sprinkling it on top of chili. Our kids don't like spicy food (yet. Lol) so I'll do that for DH and me.

    As soon as ground turkey breast goes on sale I'll make up a few pounds too and freeze it. That is a great idea. I'm so glad you mentioned it.
