    A scallion, also commonly known as spring onion or green onion, is associated with various members of the genus Allium that lack a fully-developed bulb. They tend to be milder tasting than other onions and are typically steamed and set in salads in western cookery and cooked in many Asian recipes. Diced scallions are often used in soup, noodle and seafood dishes, and in sauces in eastern dishes, after removing the bottom quarter-inch or so of the root end.

    In Louisiana, green onions would be another name for shallots.

    Looks like we've been calling green onions by the wrong name all these years.  Our "shallots" look just like your example of a green onion/scallion.  Guess you're never too old to learn!

    shallot  Notes:  Australians use the term shallots to describe green onions, but to Americans, shallots are shaped like small brown onions with papery brown skins.  They have a more delicate, garlicky flavor than other cooking onions, and are a common ingredient in French sauces.  Many people find them too hot to eat raw.   They're available year-round.  Substitutes:  green onions (white part only) OR onions (1 small onion = 3 shallots) + dash crushed garlic OR red onion OR green onions OR garlic

    Prof,  some  folks in Louisiana still cling to French language. In Germany we also called onion greens "Schalotten", and also called the shallot bulbs  you pictured the same. Ony we said "Grenn shallots" for onion greens.

    The  green shallots we grew were not the small type you see here, they were ginat green oinions, up to 2/1/2 feet tall. I had seeds from Germany and grew them in Oregon. Still have the German seed catalog with the pictures.I also grew the bulb shallots. Have you ever tried Garlic chives? They are realy good. My Chinese friends grew them, they are a sort of very large flat leaf chive with a garlic flavor.. Very good as a stir fry veggie.

     Yes I have grown garlic chives.  I will be planting some soon.
