    Has Anyone Had Luck with cake mix Cookies?

    I want to make some oatmeal cookies. I have a box of spice cake and directions to make cookies using oil, egg whites, raisins etc. Has anyone had success making shortcut cookies with a cake mix? I would like some feed back before I try this. This is the recipe I have that I want to try.

     

    Spicy Oatmeal Raisin Cookies

     

    Wholesome oatmeal cookies with the sweet goodness of raisins all come together in this spicy batter––there's a taste of home in every bite.

    Servings: Makes about 4 dozen cookies.

     

    • 1 pkg Duncan Hines® Moist Deluxe® Spice Cake Mix

    • 4 large egg whites

    • 1 cup uncooked quick-cooking oats

    • 1/2 cup vegetable oil

    • 1/2 cup raisins

     

     

    1 Preheat oven to 350ºF. Grease cookie sheets.

     

    2 Combine cake mix, egg whites, oats and oil in large mixing bowl. Beat at low speed with electric mixer until blended. Stir in raisins. Drop by rounded teaspoonfuls onto prepared cookie sheets.

     

    3 Bake 7 to 9 minutes or until lightly browned. Cool 1 minute on cookie sheets. Remove to cooling racks; cool completely.

    this is the cake mix recipe I use.  haven't made it in several years so can't remember how many cookies it makes.  I do remember how super easy it to whip up!

    1 box cake mix-any flavor

    2 eggs

    1 stick butter or margarine

    Bake 350, for about 10 minutes.  can also add chocolate chips, nuts, coconut, etc.

    I haven't made these particular cookies; but I have added raisins to numerous cookie recipes that didn't call for them to begin with, so I do not see any reason you couldn't add raisins in this recipe without any problems at all.

    I make cookies quite often with cake mixes.   They come out "puffier" than a regular cookie.  Everyone likes them!  (Plus they are so much easier)!

    I've added about everything but the kitchen sink.  Never known to fail.  If your raisins are a little on the dry side, try soaking them in hot/boiling water for a few minutes, then drain.

    I just made a batch of chocolate/chocolate chip cookies for my grandson Sunday.  It took me about 5 minutes to mix them up, and he just loves them. They are soft and chewy, and keep well.  When I send cookies to Iraq, I usually use the cake mix cookies, as they seem to stay fresher than other cookies.  This is the recipe I use:

     CAKE MIX  COOKIES

    1 box cake mix

    2 eggs

    1/3 c. vegetable oil

    1-2 T. water

     Additional ingredients: chips, nuts, raisins, coconut, etc.

    Drop onto parchment lined cookie sheet and bake for 10-12 minutes in 350º oven.

    This cookie is not oatmeal, but oh so wonderful!

    Butterscotch Cookies

    1 yellow cake mix

    1 small box instant butterscotch pudding

    1 c oil

    1 egg

    Mix dry ingredients until smooth; stir in oil and egg and mix well.  Drop onto ungreased cookie sheet and bake at 350 for 10-12 minutes.

    Thank you everyone for the tips and recipes. I like a soft puffier cookie so the cake mix kind should fit the bill.

    I make mine like nix-mom....make sure you don't over bake them and also let them set on the pan a few minutes or they will fall apart when you move them......

     

    my fav is butter pecan cake mix and add maple flavoring, top with some butter icing flavored with maple.....I make these in the fall and everyone goes crazy over them....

    Fall is a second spring, when every leaf is a flower.

    I always make the Cool Whip ones.  1 box Cake Mix. one 8 oz tub of Cool Whip and 1 beaten egg.  Mix and make golf ball sized balls.  Roll in confectoners sugar   Bake 350 oven for about 10 minutes.  They are good. I use parchment paper.

     

    You can use any kind of cake mix and add anything--chips, coconut, nuts, etc.  They are very sticky to work with, but worth it.

    I make desserts for a shelter once a month, and since cake mixes are often a loss leader in the store, this might be the most economical way to make cookies.  I think I will stock up this week, as the mixes are 88cents/box.  I do like to add either some fruit or veggies (carrots, zuccini, pineapple etc) any suggestions?

    This is one of my absolute FAVORITE cake mix based cookies!!!! 

     

    GOOEY BUTTER COOKIES

    1 (8 oz.) cream cheese, at room temperature
    1/2 c. butter or margarine, softened
    1 egg
    1 tsp. vanilla extract
    1 (18.25 oz.) pkg. yellow cake mix
    Confectioners' sugar

    Cream butter and cream cheese. Stir in egg and vanilla. Stir in cake mix until well blended. Cover and refrigerate dough 1-2 hours. Roll dough into 1" balls; roll in confectioners' sugar (coat the cookies heavily in the confectioners' sugar). Place 1" apart on ungreased baking sheets. Bake @ 350 degrees for 10-13 minutes. DO NOT OVERBAKE. Take cookies out of the oven when they look underdone. Remove to racks and cool completely. You may use different flavors of 2 layer cake mix and extracts-chocolate, lemon and German Chocolate are especially good! Makes about 2 1/2 dozen.
