    Banoffee Mascarpone Muffins

    Banoffee Mascarpone Muffins

     

    1/3 cup unsalted butter, at room temperature
    1/4 cup granulated sugar
    1/2 cup brown sugar
    4 ounce Mascarpone cheese
    2 eggs, at room temperature
    1 cup whole wheat flour
    3/4 cup all purpose flour
    1 tsp baking powder
    1/2 tsp salt
    1/2 tsp baking soda
    1 cup mashed ripe bananas
    1 cup chocolate covered toffee pieces

     

    Preheat oven to 350 F
    In a large bowl cream together the butter, mascarpone cheese and sugars. Add the eggs and beat well. Sift together the flours, baking soda, salt, baking powder and add to creamed mixture. Stir until mixed. Stir in bananas and toffee pieces.
    Pour into prepared mini muffin pans. Bake for about 15 minutes or until done. Let cool in pan for 5 minutes then remove from pan and transfer to a wire rack to complete cooling.

     Twinkle, these sound wonderful. I've got a recipe for homemade mascarpone that I've wanted to try too so maybe I'll make these using the homemade mascarpone.

    Here is the recipe, but I might try it with half and half instead of heavy cream.

    Mascarpone

    2 cups heavy cream
    1/8 teaspoon tartaric acid

    Heat cream in a heavy saucepan to 180 degrees F. over medium-high heat, being careful that it does not scorch. Remove from heat as soon as it comes up to temperature and stir in the tartaric acid. Continue stirring for 1-2 minutes. Transfer to a glass or plastic container and refrigerate for 2 hours. At this point, it should have thickened significantly. Set a sieve over a bowl and line it with a triple thickness of cheesecloth and pour in mascarpone. Let drain for an additional 10 hours in the refrigerator.

    thank you chefly for the mascarpone recipe - i will print that  - i am jsut lucky we get mascarpone in every supermarket for next to nothing here... have a lovely weekend.

     

    BTW how is DD doing? i read you depression thread and never posted anything i hope she feels better. Hugs twinkle

     Twinkle, you are lucky. I can get it at only one store and they are the same store that sells the tartaric acid.Smile

    DD is doing better. Since she started practicing EFT (Emotional Freedom Technique) she hasn't had a nightmare. I'm not sure if the supplements are helping. Once the bottles are empty I'll have her just do the EFT and we will see if there is a change. Thank you for asking.
