PIZZA BURGERS
1 lb ground beef
1 cup spaghetti sauce
1 cup shredded mozzarella cheese
4 hamburger buns
Shape beef into 4 patties. Cook hamburgers as desired. Separate buns in half. Place bottom part of bun on baking sheet. Put 3 tbsp spaghetti sauce on each bun. Place cooked patties on each bun half. Top each hamburger patty with 3 tbsp cheese. Cover each hamburger with top half of bun. Bake at 350 for 5 minutes.

RED POTATO MEDLEY
2 tbsp butter
3 cups cubed new (red) potatoes
1 1/2 cups diagonally sliced carrots
3/4 cup chopped onion
1/4 cup minced fresh parsley
1 garlic clove, minced
1/4 tsp each salt and pepper
In large skillet over medium heat, melt butter, add potatoes and carrots and toss to coat. Add remaining ingredients. Mix well and reduce heat to med-low. Cover and cook for 15-20 minutes or until vegetables are tender. Stir every 5 minutes.
Serves 4-6
