    Cool [H] Whatcha Cookin' on this Fantastic Friday, May 16TH?!?

    Happy Friday, Folks!

    Sure is a glorious day here in ChicagoLand today.  It's so nice to have all the windows and doors open for a change.

    I poached up some Chicken Chests to freeze for later use.  I know once the weather gets too humid and hot, I'll be glad I took the time to stock the freezer with Poached meats! Wink

    In any case, I've got some beautiful tomatos I'm going to dice up with some red onion and make some more Pico de Gallo for Dinner later.  It's filling but light and healthi-ER than say...tater chips and dip? Smile 

    Sure hope our Pretty Patty is having a Wonderful vacation & getting some rest as well.

    Tonight I'll make pizza.  It's chilly and gray here today - the sun looks like it's trying, but not hard enough!

    Love is what's in the room with you at Christmas if you stop opening presents and listen.

    Hi Krissy,

    It's too hot to cook here.  I'm thinking I'll go out, but not sure for what.  It depends on what I have for lunch.

    I have chicken thawing, but I don't know what I'm going to make with it yet.

     

    The sun is peeking out from behind the clouds! Woo Hoo! First time in a week! It's about 39 degrees right now, but should warm up to the upper 40's today.

    I am graduating tonight, so I believe I will make DH take us out for dinner. Party!!! I DESERVE IT!!  Probably just spaghetti factory or some such place.  Easier w/ the kids!

    I'm in the heatwave zone too, so I'm debating between salad with bacon sprinkled on it, or just getting some berries at the farmer's market and making icecream.

    Actually, it's only guilt making me consider the salad option.

    FWIW, LadyFingers, if you're going to make Icecream...then might I suggest you Really make some icecream?!? Wink  I got this recipe from Woman's Day magazine back in 1996 & it truly is to die for.  Yes

     

    Vanilla IceCream

    1/2 cup cold milk

    1 tablespoon vanilla extract

    1 14-oz can Sweetened Condensed Milk

    Dash of salt

    2 cups Heavy (Whipping) Cream

    Stir Milk, Vanilla, Condensed Milk and salt in a medium bowl.  Beat Heavy Cream in a large bowl with an electric mixer until stiff peaks form when beaters are lifted.  Gently fold in Milk mixture.  Pour into shallow 1 and 1/2 quart metal bowl or pan.  Cover and freeze at least 4 hours, stirring once after 2 hours when edges start to harden.  Serve or spoon into an air-tight container and freeze for up to 1 week.

    I'm making spaghetti tonight as both kids have 2 soccer games tomorrow...gotta carb 'em up!

    Interesting.  I have several icecream cookbooks, but I can't recall a recipe using condensed milk.  A good idea, really, as the denser solids would reduce the ice crystal size.  I may try that.

    Hello Krissy! Thanks for starting the thread again, while Pretty Patty is on vacation!! :)

     

    Today dh and I went and ate at an Amish Rest. for lunch.....this is a different one than the one we usually go to.....It was very good....

    I doubt if I will want anything for supper! LOL! Probably eat something light....maybe cereal...

    Raesmom you should definately celebrate! Congrats!!! 

    I'm thinking taco salad for dinner tonight.  That means a trip to town though, so who knows at this point.  I'm sure I'll change my mind once or twice!
