Has anyone heard of doing this to prepare Rhubarb for pie?

    Has anyone heard of doing this to prepare Rhubarb for pie?

    A friend of ours makes the beat Rhubarb and Strawberry Rhubarb Pie.

     

    Her Grandma, who was a terrific cook and baker, taught her to slice and measure the rhubarb, put it in a colander in the sink, and pour boiling water over it before mixing with the remaining ingredients.

     

    I don't know what it does other than make a delicious pie.

    I haven't done that before but what I do is cut the rhubarb and place it in a bowl. Add some sugar and mix. Let it set in fridge for 24 hours before making the pie. Drain well and use as instructed. IT sweetens the rhubarb nicely and pulls some of the moisture out but leaves it still pretty moist and the pie isn't quite as runny as they can get sometimes.

    My Grandma made wonderful rhubarb pies but she didn't do this. I think it just pre-cooks the rhubarb a little....can't hurt! I think I will make some rhubarb muffins this afternoon when I stop sewing. Sounds good!

    I do that all the time it helps soften the rhubarb and gives the pie more flavoring try it I think you will agree.Joyce

    YES!  I discovered this way of making rhubarb pie last summer, and it is without a doubt, the very best rhubarb pie I have ever eaten.  Don't know what that boiling water does, but it is magic.  CeCe
