    Cheesecake recipe ?

    Most cheesecake recipes I have seen call for a springform pan.I was wondering if a cakepan can be used instead of a springform pan? I don't have a springform pan. If so ,what size pan should be used for a recipe  calling for a springform pan?

    I have a cheescake recipe that call for a glass pan, and it does fine...

    Here's the recipe I use....instead of the sour cream topping, I use cherry pie filling, also I use either Jiffy or Bisquick in it for the baking mix. I have also used sour cream in place of the yogurt. Everyone loves this recipe!

     

    Cheesecake Squares

    Quick Cooking

    "This is my favorite cheesecake made easy," assures Katie. It bakes in a jiffy and is rich, creamy and irresistible, especially when served with fresh fruit.

    SERVINGS: 9

    CATEGORY: Dessert

    METHOD: Baked

    TIME: Prep: 15 min. Bake: 30 min. + cooling

    Ingredients:

    • 2 packages (8 ounces each) cream cheese, softened
    • 1 cup sugar
    • 2 eggs
    • 1/2 cup plain yogurt
    • 2 teaspoons vanilla extract
    • 1 teaspoon lemon juice
    • 1/2 cup Buttermilk Biscuit Mix (recipe also in Recipe Finder)
    • TOPPING:
    • 1 cup (8 ounces) sour cream
    • 2 tablespoons sugar
    • 2 teaspoons vanilla extract
    • Fresh fruit, optional

    Directions:

    In a mixing bowl, beat cream cheese and sugar. Add eggs, yogurt, vanilla, lemon juice and biscuit mix; mix just until smooth. Pour into a greased 9-in. square baking dish. Bake at 350° for 25-30 minutes or until center is nearly set. Place on a wire rack while preparing topping. In a bowl, combine sour cream, sugar and vanilla until smooth. Carefully spread over cheesecake. Bake for 4 minutes (topping will not brown or set). Cool on a wire rack for 1 hour. Refrigerate until completely cooled. Garnish with fruit if desired. Yield: 9 servings.

    It can be done, just watch your time. I just wrote a review for the Banana Cream Cheesecake and I baked it in two pie pans instead of one springform. There was a lot of batter so it was easy to divide. But it drastically cut the cooking time since the pies were half the size of the cheesecake. The center of your cheesecakes should be nearly done when you turn the oven off. They should still have a little wiggle to them. They'll continue to cook by themselves for just a little bit.
