I'm making this to put on roasted chicken breasts this weekend.
1 cup canned black beans,rinsed and drained
1 ripe mango,peeled,pitted and finely diced
1/2 small red onion,finely diced
1 jalapeno pepper,finely diced
1/4 cup lime juice
1-2 Tbsp. honey,depending on the sweetness if the mango
1/4 cup olive oil
1/4 cup coarsley choppped cilantro
Mix all of the ingredients in a large bowl. Season with salt and pepper.Cover and chill if not using right away.Let come to room temp one hour before serving. Depo!!!
