    What's for Supper on May 20th?

    I didn't see anyone had started this post yet so here goes. It is sunny here and supposed to rain later. We are going to have Chicken tonight, Not sure how I am going to fix it (fried or baked), with mashed potatoes and squash. I am also thinking of making biquits from scratch (only cause I dont have a mix handy lol).

    going to grill hamburgers with corn on the cob, cantaloupe, and strawberries with angel food cake for dessert

    Magnetqueen! I'm coming to you house!! :) Thats one of my favorite 'summer' meals!

     

    I am still having lots of problems with allergies, so its chicken noodle soup tonight!

    Thanks for getting this thread started today, KnittyMom...I just looked at the clock and realized I was running late! Embarrassed  In any case, Thank You! Smile

    I'm going to make Beef Kabobs for Dinner this evening!  I have a nice boneless sirloin all thawed out & have some yellow squash, orange sweet peppers and some red tomatos to *kabob* with the Beef. 

    Now I just need to figure out how to soak the wooden skewers...any ideas?!?  TIA!

    I'll just toss them in with some marinade and hold them down with a fork &  that should do the trick, right?!?

    Hey gang! Another gorgeous day here! I am already hungry for supper and it's only mid morning. Geesh.

    grits

    hushpuppies

    Hi, Knittymom and everyone. Tonight I am cooking a little bitty pork roast (just big enough for two) and some homemade mashed potatoes (in other words, not instant) and maybe some spinach. Oh, and some cantaloupe! Low fat ice cream for dessert.

    It is hot here again today. I think we are going to get some rain starting tomorrow night through the weekend. Hope it cools things down.

    Tonight will be breaded, fried haddock and coleslaw.  DH cut up the coleslaw a little while ago - gotta go put the dressing on it and get dinner started.  Everyone have a great evening!

    We are having beef stroganoff and broccoli and cheese danish for desert ....I have to come up with some new dinners here.  We haven't had this in a long time and decided to make it but lately since the holidays it is all comfort food at our house .   I was going to make some beef short ribs but almost had a coonary at the grocery shop today checking out their price.  Egads are we going to be able to afford food AND gas and HVAC for the house  until we are dead?

    Knittymom - thanks for starting the post for us!  I've been on the road all day, I don't feel like doing a damn thing but...they wanna eat so I hafta cook!  I put 180 miles on my little truck today Sad

    Sloppy Joes here tonight, not sure that I'll make a side...maybe some baked beans.

    Krissy - not that it matters now - but I would think soaking the skewers in marinade would cause them to burn...how did it turn out?

    Tammy - you should post that tilapia recipe...pretty please...

    Hey Sue, here is the recipe. I am pretty sure I got it over on recipes, but don't remember for sure! Enjoy!

    Dijon-Crusted FishLight & TastyDijon, Parmesan and a hint of horseradish give this toasty fish from Scott Schmidtke of Chicago, Illinois lots of flavor. The preparation is so easy, it takes just 5 to 7 minutes to get 4 servings ready for the oven.SERVINGS: 4CATEGORY: Lower Fat METHOD: BakedTIME: Prep/Total Time: 25 min.

    Ingredients:

    ·                         3 tablespoons reduced-fat mayonnaise ·                         2 tablespoons grated Parmesan cheese, divided ·                         1 tablespoon lemon juice ·                         2 teaspoons Dijon mustard

    ·                         1 teaspoon horseradish

    ·                         4 tilapia fillets (5 ounces each) ·                         1/4 cup dry bread crumbs ·                         2 teaspoons butter, melted Directions:

    In a small bowl, combine the mayonnaise, 1 tablespoon Parmesan cheese, lemon juice, mustard and horseradish. Place fillets on a baking sheet coated with cooking spray. Spread mayonnaise mixture evenly over fillets.
        In a small bowl, combine the bread crumbs, butter and remaining Parmesan cheese; sprinkle over fillets. Bake at 425° for 13-18 minutes or until fish flakes easily with a fork. Yield: 4 servings.
