    Not all flours are created equal

    The brown rice flour from Arrowhead Mills rises higher than the brown rice flour from Bob's Red Mill. I'm not sure why, but it could be how finely it's milled. I prefer a lighter, dryer cake. At any rate, those are the only two brands sold locally.

    That's good to know,thank you.Do you know anything about potato flour or tapioca flour?
