    Need bread recipes

    I have just started to cook gluten-free in the last 6 months for my 9 year-old son.  The bread recipe that came with my bread maker is not good.  It falls apart and just doesn't taste good.  Does anyone know what kind of non-wheat flour I can use to get a good consistency bread?  I am finding recipes or pastas but just can't get the bread.  We really miss it!  I will especially need it for when school starts.  The schools just have no clue.  Thanks!

    I really don't have any good bread recipes. Years ago, when my son was still in school, we found that the gluten free breads were a disgusting mess by lunch time.

    What we did was substitute rice cakes when having bread was truley necessary. Sandwiches were pretty much out of the picture.

    My husband is now gluten intolerant and we use the cornbread recipe on the sack of cornmeal, but substitute buckwheat flour for the regular flour the recipe calls for. It is a darker color than "normal" cornmeal, but tastes pretty much like you expect cornbread to taste. It holds together well enough to enjoy at supper. We have not tried packing a lunch and using it.

     Hey, Deborah,

    I just googled 'gluten-free bread recipes' and got a whole list of sites.There is one I'm reading right now, that seems to great. This guy has a blog that he does. I just bookmarked it for my own use; I have a good friend who has Celiac's, and I want to help her find some good stuff.

    Hi Deborah, it took me eight years to find a good bread recipe, I now have 2 that I use and love. The first is a CORNSTARCH BREAD   makes 2 loaves  ( T=tbls ~ t=tsp ~ c=cup) 2 1/2 c cornstarch; 1/3 c potato starch; 2 T sweet rice flr; 2 T dried egg white; 1 1/2 t xnathan gum; 3 T rice bran*; 4 1/2 t yeast; 1/4 c sugar. Combine all in mixer bowl, mix well. Add 2 cup hot water, beat 2 min on med. speed. Cover bowl, let stand 15 mins. Spray 2 loaf pans  with Pam or grease with shortening. (I like the Crisco No Trans Fat style).Heat oven to 450. After dough has set 15 mins, add 2 1/2 T oil & 1 1/2 t salt, beat until smooth. Pour into pans, cover with plastic wrap sprayed with Pam. Let rise until batter just reaches top of pans, the bake 25 mins until golden brown. Remove, cover with a towel, cool on rack 10 min. Turn out to finish cooling. *Or finely ground nuts or nut flour.   If this one doesn't suit your needs and/or taste, I'll send you my other one, an EGG BREAD.  Good Luck, GammieO  Big Smile

    Hi Debbie

    Baking GF bread takes a bit time to master. When it comes to GF baking, it's a matter of mixing different flours to take advantage of their specific properties. Did your recipe call for xanthan gum or guar gum? Without one or the other gums many GF baked goods will crumble/fall apart.

    You might checkout a number of flour mix formulae from GF pioneer Bette Hagman. Also consider getting some of her cookbooks, in them she offers up all sorts of info, tips, hints on GF baking

    Yogurt and Honey Quickbread - This one is a favorite of mine! One note: we leave out lemon zest and cut the sugar a bit. There's even a picture of it
