    ISO orzo pasta salad

    Hi everyone, I am looking for a simple summer salad made up of orzo pasta and lemon and parsley.  I think Giada made it once but I cannot find it on foodtv website.  Does anyone here have a quick, simple recipe for this.  Thanks in advance. (TIA)  Donna  Geeked

    I know this is`nt it.But-- I think I`ve seen it posted on the recipes bb.I might even have posted it.Big Smile I`ll look.

     Orzo and Feta with Lemon-Caper Dressing and Kalamata Olives

    1 tsp tumeric
    1 pound orzo
    1/2 cup extra-virgin olive oil
    1/4 tsp freshly ground white pepper
    1 tsp salt
    1/2 cup finely minced fresh parsley
    1/8 cup lemon juice
    1 tblsp capers, drained
    1/2 tsp sugar
    1 cup julienned sun-dried tomatoes
    1/2 cup pitted, roughly chopped Kalamata olives
    1 cup crumbled feta cheese

    Bring a large pot of salted water to a boil. Add the tumeric, and then add the orzo; cook for 10 to 15 minutes, until it is al dente. Drain the orzo, and rinse it in cold water. Set aside.

    In a bowl large enough to hold the orzo, make a dressing by blending the olive oil, white pepper, salt, parsley, lemon juice, capers, and sugar. Add the cooked orzo to the dressing and combine. Stir in the sun-dried tomatoes and olives. Carefully toss in the feta cheese, mixing lightly, so the feta stays in nice uniform pieces.

     I can't seem to copy and paste at this site.  I did find Giada's orzo salad at the food tv site.  Maybe you can go to foodtv.com, and  in their search box type in "beach party orzo salad".  A link to Giada's orzo salad will pop up.

     In the mean time, is there a reason why I can't copy and paste?  I highlighted her recipe, clicked on copy, then when I came back here I didn't have the option to paste.  Maybe it is copywrite protected.

    Orzo Salad

    Orzo Salad

    4 cups chicken broth
    1 1/2 cups orzo
    1 (15-ounce) can garbanzo beans, drained and rinsed
    1 1/2 cups red and yellow teardrop tomatoes or grape tomatoes, halved
    3/4 cup finely chopped red onion
    1/2 cup chopped fresh basil leaves
    1/4 cup chopped fresh mint leaves
    About 3/4 cup Red Wine Vinaigrette, recipe follows
    Salt and freshly ground black pepper

     

    Pour the broth into a heavy large saucepan. Cover the pan and bring the broth to a boil over high heat. Stir in the orzo. Cover partially and cook until the orzo is tender but still firm to the bite, stirring frequently, about 7 minutes. Drain the orzo through a strainer. Transfer the orzo to a large wide bowl and toss until the orzo cools slightly. Set aside to cool completely.

    Toss the orzo with the beans, tomatoes, onion, basil, mint, and enough vinaigrette to coat. Season the salad, to taste, with salt and pepper, and serve at room temperature.

     

    1/2 cup red wine vinegar
    1/4 cup fresh lemon juice
    2 teaspoons honey
    2 teaspoons salt
    3/4 teaspoon freshly ground black pepper
    1 cup extra-virgin olive oil

    Mix the vinegar, lemon juice, honey, salt, and pepper in a blender. With the machine running, gradually blend in the oil. Season the vinaigrette, to taste, with more salt and pepper, if desired.

    Yield: 1 3/4 cups
