Blue Cheese Mayonnaise or Goat Cheese Mayonnaise
Ingredients:
1 cup Hellmann's® or Best Foods® mayonnaise
1/4 cup crumbled blue cheese or 1/4 cup crumbled fresh goat cheese
2 tablespoons finely chopped fresh thyme, flat leaf parsley, chives or basil
Salt and pepper
Directions:
Whisk together the mayonnaise, cheese, herbs (if using) and season with salt and pepper.
Avocado Relish
Ingredients:
2 ripe Haas avocados, peeled, pitted and diced
1/2 small red onion, finely diced
1 jalapeno or serrano chile, finely diced
Juice of 1 fresh lime
3 tablespoons finely chopped fresh cilantro
Salt and freshly ground black pepper
Chipotle Ketchup
Ingredients:
1 cup ketchup
1 tablespoon pureed chipotle in adobo
1/4 teaspoon salt
Directions:
Combine all ingredients in a bowl and let sit at least 15 minutes before serving to allow flavors to meld.
Green Chile-Pickle Relish
Ingredients:
3 poblano chiles, grilled, peeled, seeded and finely diced
3 dill pickles, finely diced
1/4 cup finely chopped red onion
3 tablespoons fresh lime juice
2 tablespoons honey
3 tablespoons finely chopped cilantro leaves
3 tablespoons olive oil
Salt and freshly ground pepper
Directions:
Combine all ingredients in a medium bowl and season, to taste, with salt and pepper. Let sit at room temperature for 30 minutes before serving so that the flavors meld. Can be made 2 days in advance and stored in an airtight container in the refrigerator. Bring to room temperature before serving.
