    Strawberry Cheesecake Pie

    Strawberry Cheesecake Pie

    6 oz. pkg. strawberry-flavored gelatin
    2 cups boiling water
    1 pint vanilla ice cream
    2 (8 oz.) pkgs. cream cheese
    1 cup whipping cream
    2 graham cracker crumbs or pie shells

    Dissolve gelatin in boiling water. Add ice cream by
    spoonfuls; stir until melted. Chill to the consistency
    of unbeaten egg whites (partially set). Meanwhile,
    beat cream cheese in a large mixer bowl until fluffy.
    Gradually add whipping cream; beat until smooth.
    Beat in gelatin mixture. Chill until mixture mounds
    when spooned, about 20 minutes.

    Pour mixture into Graham Cracker Crusts. Cover
    and chill for 6 hours. To serve, dollopw ith whipped
    dessert topping or cream and top with sliced
    strawberries, if desired.

    Serves 16.

    GRAHAM CRACKER CRUSTS:

    2/3 cup margarine or butter
    1/2 cup sugar
    2-1/2 cups finely crushed graham crackers
    (36 crackers)

    Melt margarine or butter. Stir in sugar and graham
    crackers. Spread into two 9-inch pie plates. Press
    onto bottom and sides. Chill for 1 hour or bake at
    375 for 4 to 5 minutes. Cool before filling.

    Thank you for the recipe - This looks so good!  Since I can't get graham crackers here (England), I thought a chocolate crust made from Oreos might be really good.  What do you think?  Have you made this dessert?
