This is one of our favorite recipes for many of our family gatherings and for the summer holidays. I'm making this for tomorrow. It's easy and as Mr. Food says: "It's Oh So Good"!!!

LOADED BAKED POTATO SALAD
6 medium baking potatoes
1-2 bunches green onions (chopped)
8 strips of bacon (cooked and crumbled)
3/4 cup sour cream
3/4 cup mayonaise or Miracle Whip
8 ounces shredded cheddar cheese
black pepper (to taste)
1/2 teaspoon salt
Bake potatoes in a 400 degree oven for 1 hour or so. Let cool completely.
Peel 1/2 of the potatoes. Dice them all.
Mix the mayo/Miracle Whip and sour cream together.
Add the salt. Combine the cheese, bacon, potatoes and onions. Add the mayo/sour cream and mix well.
Makes approx 6-8 servings
I do not add the salt nor the black pepper. I let the guest add their own.
This can be served cold or warm. If you want it warm, just place into a baking dish and cook at 350-375 degrees for 30-40 minutes.
