    DC Conversation - Wednesday, July 9

    Welcome to the Diabetic Connection or as we call it - the DC!!!!

     

    Our "DC" -   A place to connect with other BBer's who have diabetes and those who know or care for someone who has it.

     

    Our Purpose -    To share our stories, thoughts, questions, concerns, victories, and problems regarding the challenge of living with diabetes.

    Hi gang!   I'm just sittin' here with a nice glass of fat free milk.  Feeling thirsty for milk for some reason lately.  The dietician would be happy to see that, she used to insist that I get 2 servings of dairy in each day. :)

     

    Hauke, I hope you slept well and took it easy, that dust will wait, believe me!!!  And the mail, it is amazing how much mail can accumulate when you are gone for a spell.  When dh was in the hospital all those weeks, and we came here once a week to pick up the mail, there was always a ton of stuff to take back and go through each week.

     

    That dumb fire took a bad turn last night and they had to evcuate many more people in the middle of the night.  Sudden turn of the winds caused it, and about a dozen homes burned, it was so sad to hear the story from the firefighters who had been standing by those homes for two weeks keeping them safe.   On the news, they say these fires won't be done with until October in fact.   A couple of those fires were human caused, not just from lightning.

     

    Nice to see you Rebecca, I was wondering how you were faring.  Hot and humid, so many of us have that darned humidity.  Make yah feel like a dripping washcloth that needs to be wrung out.

     

    Tomorrow they say will be the highest temps on this weeks heat wave, there are towns down there that expect 113 degree temps.   And that nasty dirty smoky air too, some of the machines that measure the air, their numbers don't even go high enough to count all the dirt in the air in fact.   It has been extraordinary.

     

    Someone mentioned that hiway 101 down to San Diego, well, it's still a dangerous road during the foggy time of year.   Even we had to drive on it with open windows trying to see the middle line!!!!  No foolin'!!!   That hiway 99 is also the same way, they have to have police cars take lines of cars through during the winter to try to avoid accidents.

     

    Deb, I hope you find a pretty shower curtain that you will enjoy for a long time.   They have so many kinds of colors and patterns and even some funny ones now, compared to the "old" days.

     

    I got a new "Prevention" magazine and "Ladies Home Journal" in the mail today, and a "Birds and Bloom Extra" yesterday, so need to go to bed so I can begin to read them.   Do any of you guys have piles of unread or unfinished magazines around the house like that??  Then dh and I decide not to subscribe to any more magazines!!!  After awhile, we get invites in the mail to get them again, and darn it, either he or I decide to get that one "free" issue, only to subscribe again and start the pattern again.   What's with us???  lol  

     

    Joyce, I'm glad you had an appt. with the doctor and nutrition person, to set your mind at ease.  Seven inches, just look at that, terriffic!!!!   Wonderful!!!!  

     

    Hello to Nancy, Carole, Darla, Sandy, Marge, Michelle if you can peek in at some point. 

    I'm going to bed, I'm getting puny here, listening to music and tippity tappity on the keyboard.  Mary, wish you could send me some coffee!!!!  lol

    OK, to Doris.  I still won't know everyone on a first name basis, but I just had to reply to something in your post.  You asked if any of us had magazines, unread, etc.????  Oh, my goodness.  I wish I had a dollar for each of the magazines I have kept/read or unread.  It is impossible for me to throw them away, without at least looking through them.  It's funny, but I do the same thing you were talking about.  I get the free copy and most times, get the subscription for a year.  Once in a while, when I am thinking straight, I cancel.  Are you in CA?  I am in Texas, no fires here.  I can't imagine what those people are going through. 

    To you other gals, I am not leaving you out, I just may have to address you one at a time, until I get everyone straight.  I also went to Kitchen Chat a while back.  I forgot I joined and so tonight, I posted to them and told them I must have gotten lost in all the posts.!!!!!  They have some good thing going there, too.  I am mainly here, but plan on checking in at Kitchen Chat at least once a day.

    It is quite late, so I guess I should turn in.  Now I will need to try to locate some of my magazines tomorrow.  It is soooo overwhelming.

    Good Morning Everyone!!!!!!!!!!

     

      I was sleeping since before 8:30 PM last night, so here I am all bright eyed and bushy tailed!! LOL I was having computer withdrawal, since I couldn't get on the computer last night.  We had company and after the dentist I went grocery shopping, so the afternoon and early evening were shot!!!

     

      Wish I could get all of you some coffee!!!!!!!!!!!!!  Coffee  Michelle, are you here this AM!!  The coffee is tasting better than usual!! LOL  Coffee

     

       Rebecca, nice to hear from you! I am sorry your one section is not healing properly.  I am sure you are tired from working all that overtime.  How is Paige and the little guys? Are you doing any fun things this summer aside from working?

     

      Carol, sorry you are not feeling well.  I think that bug is going around with the headache and upset stomach.  My DD had it and said it was the sickest she ever was in her life.  Your grilled salmon sounds awesome!!!

     

      Deb, sorry the boat weekend got canceled.   I hope you and Danny do something fun on the weekend to make up for the disappointment.  Gosh that must hurt to break your knee cap.  When I read that, I cringed thinking how much pain your sister MIL must be in right now.  There are so many pretty shower curtains out there, I am sure you will find what you are looking for.

     

      Joyce, 7 inches lost!! Wow, that is GREAT!! You are doing FANTASTIC!!!! Bet you did the "happy dance" with the added protein and salad!!!!

     

      Doris, sorry to hear the fires took a bad turn and all those people lost their home. The news is very hard to watch sometimes and it hurts seeing all the hardship and loss so many people suffer through.  I seem to collect magazines galore too.  I read them and alot of times then give them to my DD's.  I clear the coffee table and it looks nice for awhile, then the magazine start to build up again.

     

      Marge, I hope all is well with you!! Keeping you and your family in my thoughts and prayers.

     

      I went to the dentist yesterday and got a partial or tempory crown put on my tooth.  Wow, what a afternoon.  I sat there wondering why I was doing such a thing!!! LOL  It all went well though and I am sure in the future I will be glad I did this.  I go back to the dentist in August for the permanent crown, then I will have the other tooth done too.  Then I will get the new partial.  I wanted to get all this dentist stuff done before winter, but it looks like this will drag out.  New toothies for the holidays....maybe!!! LOL

     

      Good Morning Darla!!!  I like Kitchen Chat too and visit there daily or just check to see what everyone is saying or doing.    I am always looking for recipes too.  Hope all is well with you!!!!!!!!

     

      This AM I am getting a much needed hair cut and hopefully some cleaning done.  I have a real early appointment, 8:30 AM, so it won't shoot the whole day.

    Morning all - I'm here, just busy. Mouth is improving, still a bit sore and swollen but nothing like it was. 4th was ok for not feeling well and not being able to chew.

    Doris – I like my milk ice cold.  It is very good that way.   Have the Today Show on and they were talking how the fire turned for the worst.  I hope you aren't in any danger and that you don't have to evacuate.  I have a very healthy respect for fire.  I can't even imagine being in temps of 113.  Those poor firefighters, having to be fighting the fires in that heat.  It's wonder half of them don't collapse.  It seems my magazines all come at the same time so they do pile up.  But I get through them eventually.  I've been trying to let a lot of the subscriptions expire. 

    Darla – I try to peek into Kitchen Chat from time to time, too.  They do have some good topics.

    Mary – I'm glad the dentist went okay and you aren't in any pain this morning.  Yes, I actually am looking forward to salad.  But she confused me.  I'm only supposed to be eating an ounce (by volume), but yet she said to eat about a palm-full.  To me, that is more than ounce.  Have fun getting your hair cut.  I think I need to do that soon myself.

    Michele – You poor thing.  You sound very busy.  I hope your mouth is all better soon.  How painful.

    I did my walk this morning, but I'm tired.  I need to run to the grocery store and also to my sister-in-law's at some point.  I had bought them a gift card to a Mexican restaurant.  My brother always does so much for me, so I wanted to do something.  I know he won't take money, so this way they can treat themselves to a night out.  So I want to get that to them.  This morning it is muggy again and already 70 degrees.  The air is supposed to clear out later today and the weather man even said it might be "crisp" in the morning.  That will make for a nice walk.

    Hello everyone!

    I'm new to your group & appreciated Deb inviting me to join in on your chats! As I read your conversations this morning, I'm impressed with how close you all are. No one has been negative nor degrading to another. I've attempted to participate in on-line "support" groups before but got out when I didn't find much support! I'm not looking for technicals, I'm looking for friends who have "been there, done that" with diabetes. I don't know about any of you but I get really tired of the technicals of being diabetic & having your world revolve around numbers! Unfortunately, once I return to work (I'm off until 7-21 due to carpal tunnel surgery), I won't be always be able to participate daily. My current position is so mentally exhausting that, once I get home, I don't want anything to do with a computer or thinking for that matter. I do look forward to checking in as much as possible, however, & look forward to getting to know all of you better!

    Good morning everyone.

     

    I'm up and going this morning.  I feel much better.  I really think it was just the weather change that caused the headache.

     

    Joyce we didn't get any storms yesterday and very little rain.  Boy your lose of 7" is fantastic.  You're doing a great job.

     

    Hauke sure hope that you're rested and feeling better.  Also hope that Rebecca is feeing better.

     

    Deb we'll take some of your rain.  I've noticed alot of yards are starting to turn brown.  Where are you and Danny planning to go for your weekend away?  We're going to be in Holland the weekend after next babysitting for Lucas.  Tom & Greta are going out on her parents boat on the 19.  I'm sure glad they don't take Lucas out on the boat yet.  I'd be a nervous wreck until they got back into the slip.  I'd like to find a new shower curtain for our guest bathroom.  The one up has been there for years.  I'm a bit sick of looking at it.

     

    Mary how's your garden doing?  I'm watching the tomatoes and zucchinis.  Small veggies are on but they're not growing very fast.  I haven't even seen blossoms on the cucumbers yet.  Some green peppers have started as well.  I can't wait for all of the homegrown goodies.  I think we're headed for the Farmer's Market in South Bend tomorrow.

     

    Doris those fires are terrible.  Fire scares me to death.  I wouldn't be able to live where you live because of them.  Our house burnt down in 1950 and my sister died as a result of the fire.  I don't remember the fire at all but if I smell burning wood I get antsy and have to start checking around the house to make sure everything is ok.

     

    Darla I check into KC also.  I don't respond to much there but I do read some of the topics.  I check into recipes as well.  Again I don't respond but boy I sure copy the recipes.

     

    Michelle hope you get to feeling better soon.

     

    Susan it's good to have you join us.  I hope to see you here often.

     

    Patti called last night to tell me to check out our church's web site.  They've finally announced that we have a new priest.  SHE will start September 1.  The only woman priest I've had contact with is the priest of the church Tom & Greta attend.  So this will be something really different for me.  I'm a bit of a traditionalist when it comes to the church.  I guess I'd better get used to it!  The Episcopal church has had women priests for years as well as girls and women that serve at the alter.  Our women lay readers actually do a better job then most of the men.  I'm really glad that we have a priest.

     

    Guess I'd better get around.  I'm going to do laundry today and go grocery shopping.  I want to go see Mom this afternoon as well.

    OK, I can still say, Good morning.

     

    DORIS, I like when you post after Hauke gets this going for the day. Those fires sure are something, and they make the news all over the US. I love cold milk and have always had it every day. I didn't drink coffee until 8 or 9 years ago. As for mags all over, I will join the group on that one, too. Cleaning the basement, I found some mags from the 80's.

     

    DARLA, I try not to keep as many mags now, as I used to. If I find an idea I like, I have a folder now for different categories. I am always on the lookout for craft ideas for my church group. I go to KC, too. I like to read the Prayer Circle lesson everyday. I post there a couple of times a week, too. I am one of their lurkers. I have met several of the ladies and they are wonderful gals.

     

    MARY, the dental work takes so long sometimes. Hoping everything falls in place for you. I took Bradley for a hair trim early this morning. I called the hairdresser up and she could take him right away, so we literally flew over there. He didn't care because it postponed the crossword puzzle time. LOL

     

    Hi, MICHELE.

     

    JOYCE, I am giving you a hug for the 7 inches that are gone. Can you say, "YAHOO"? That's how our morning was, crisp! But, it sure warms up quickly enough. I like how your food is being added. It doesn't seem like much, but probably satisfies you.

     

    Welcome, SUSAN. This is a good place for help, support, concern and friendship. And, everyone is NICE.

     

    CAROL, I know you're happy to have a new priest. The ELCA Lutheran church near us has a female minister. Bet you can't wait for next weekend so you can hug that little boy, who's probably not so little anymore. No headache for me from the weather, but the dampness sure affects my arthritis. Good you are feeling much better.

     

    Time for lunch, and then food shopping and to Kohl's for grannie discount day. BBL

    Hello and welcome to Susan.  Join in anytime-hauke quite often starts the post early for those of us on the east side of the country.  You are right about the support and friendship of this group.  Sometimes, it seems like we have all been life-long friends.

     

    Mary, I'm glad the dental work went well yesterday.  I wonder sometimes why dental work drags out so long??  We are not humid today, and shouldn't be for a few days.  I got home from working out and mowed the front yard.  Not to worry-I was on the rider, so no energy expended!!LOL

     

    Doris, that is so sad about the fires getting worse.  I sure hope you remain in a safe area and they stay away from you.  I finally stopped all my subscriptions except Light&Tasty and really don't miss the others.  I try to hang on to the mags for a year, then find someone who would like the recipes in them.

     

    Waving to Michele.  I guess I forgot-what is wrong with your mouth?

     

    Nancy, that's funny that Bradley was willing to "give" up crossword time for a haircut!!  Hope you enjoy this dryer weather.

     

    Darla, yup to the magazines.  Always some somewhere-even if I have to buy them at the checkout. Don't know why I bother with buying them, I'm always disappointed in them.

     

    Carol, I'm glad you finally have a new minister.  A women might make a nice change.  Danny and I will probably head to Manistee for the afternoon, and then head to the center of the state to Mt. Pleasant and hit the casino there.  Since my sister and I would have gone to the casino in Manistee, it makes sense(kind of) to head there.  Have fun with Lucas.

      We had a rainy day, but not a humid day and now it is partly sunny.  I went this AM to get a much needed hair cut, then came home and cleaned the bathrooms....how exciting!! LOL  Ron was antsy, so we went for coffee and we decided we needed a little snack.  Brought some soup home for home, which she loves,.  Potato.   DD and GD came to visit this afternoon, which is always nice.

     

      Susan welcome to our group.   Deb, is right, we are all like life long friends.  Join in anytime and if we can help you, just ask.

     

      Nancy, that is cute about Bradley and the hair cut!! Glad your weather is dryer.  Our garden is looking good from all the rain.

    I have some recipes to share again.  This method of making brown rice is wonderful.  I tasted the rice right out of the oven and I really liked it.  But----I made the rice to use in a salad.  I'll post both recipes.  This was posted by Chefly over in recipes.  Let me tell you this gal knows what she's talking about when it comes to cooking!!

    We love brown rice this way.

    Baked Brown Rice

    1-1/2 c. brown rice
    1 Tbsp. oil
    1/2 tsp. salt (if water is used)
    3 c. boiling water or broth

    Bake rice in a 13 x 9" baking pan at 350ºF for 8 min. Remove from oven and increase oven temp. to 400ºF.

    Spray a 2-1/2 qt. round casserole with non-stick cooking spray. Pour rice into casserole. Add oil, salt (if using) and boiling water or broth. Cover and bake for 40 min. Remove cover and fluff with for,. Cover and let stand 10 min. If too moist, return to oven (uncovered) for 2-3 min.
    Serves 4-6.

    This is the salad I used the baked rice in.  It's great.  I think mint would be good in place of the dill but the dill is good.  Ashleigh  posted this one over in recipes.

    Is this what you are looking for? Crossing my fingers for you!

    Persian Rice Salad

    2 cups cold cooked long-grain brown rice (try brown jasmine or brown basmati rice)
    1 Tablespoon olive oil
    3 Tablespoons lemon juice (maybe less, try it and see)
    1/4 to 1/2 teaspoon. dill weed, by taste
    1/2 teaspoon salt,
    6 thin scallions, sliced thin
    1/3 cup toasted cashew pieces (forgot to buy cashews and didn't have any other nuts in the house so I used sunflower seeds)
    1/3 cup medium dates, cut up (I used raisins)

    Dress rice with combined olive oil, lemon juice, and dill weed. Add salt to taste. Combine with scallions, cashew pieces, and dates and serve immediately. (If you can't serve right away, set the cashews aside and add them just beforehand.)

    Makes 4 servings (2 1/2 cups)

     

    Here's the last recipe.  Aashlee has posted this in the DC recipe collection.  This one is a keeper also.  It's great for something different.

     

    NORTH AFRICAN ROASTED CAULIFLOWER SALAD

    4 c. cualiflower florets (about 1 1/2 inches wide)
    3 Tbsp. olive oil
    1 garlic clove, mined or pressed
    1/2 tsp. ground caraway seeds
    1/2 tsp. ground coriander
    1/2 tsp salt
    1 c. chopped tomato
    1 to 2 Tbsp. chopped fresh parsley

    Preheat the oven to 450 degrees F.

    Toss the cauliflower florets with the oil, garlic, caraway, coriander, and salt until well-mixed and evenly coated. Place in a single layer on an unoiled baking tray and bake until the cauliflower is tender and begins to turn a golden brown, 20 to 30 minutes. Carefully stir a few times during baking.

    Remove the roasted cauliflower from the oven and transfer it to a platter or shallow serving bowl. Allow to cool to room temperature; then top with the tomatoes and parsely.

    Serves 4.

    Per serving: 129 calories, 2.4 g protein, 11.3 g fat, 6.7 g carbs, 1.5 g saturated fatty acids, 0 mg cholesterol, 319 mg sodium, 3.4 g fiber

    Ok, this is starting to make me very hungry.  I LOVE cauliflower, yum.  Thanks for sharing.  I have never had much luck with brown rice, I think this recipe sounds easy and tasty. 

    One question????  I guess I should look it up, but does brown rice have fewer carbs than white?  I went on a very low carb diet with my sister, several years ago.  Of course we both lost our weight, but she isn't a diabetic and kept hers off.  I am not saying that a diabetic automatically puts the weight back on.  It was just very hard for me to stick with almost all protein.  I just never found a way to balance and keep the weight off.  My sister loves meat, cheese, butter, etc.  Believe it or not, she has stayed small for years now.  I haven't.  I don't eat all carbs during the day, but I just can't live on pure fats and proteins.  We were doing the Suzanne Sommers Sommersizing plan.  I even tried the Atkins diet.  I just can't maintain.  My sister can go without eating all day.  She isn't diabetic, so she has no problem there.  She has no idea what I am going through, even though I try to explain it.  

    I am the only one in my family for three generations that has Type II.  My dad said two of his aunt's on his mother's side had it, but didn't know it and they ended up losing their toes.  I know that sounds bad, but years ago, they just didn't know anything.  Of course,  they died before I was born.  

    Enough of all of that.  I hope everyone is feeling better and having a great evening. I am going to hit the shower and wash my hair.  I will check back after that and see who has posted.
