    HONEY WHEAT MUFFINS RECIPE

    Wanted to share this recipe with all of you as it's one of my favorites for breakfast or a snack. Not only is it diabetic friendly but also low fat! Enjoy!

     HONEY WHEAT MUFFINS

    Makes 12 muffins

    1 cup all-purpose flour

    1/2 cup whole wheat flour

    2 tsp. baking powder

    2 egg whites or 1/4 cup egg substitute

    1/2 cup skim milk

    1/2 cup honey

    1/4 cup unsweetened applesauce

    Cinnamon

    Non-stick cooking spray

    Preheat over to 400 degrees. Spray muffin cups in tin with cooking spray. DO NOT USE PAPER LINERS AS THEY WILL STICK TO THE MUFFINS. In large bowl stir together flours, baking power & salt. Make a well in the center. In another bowl, combine egg whites/substitute, milk, honey & applesauce. Add to dry ingredients. Stir with a spoon just until moistened. Batter will be lumpy. Fill muffin cups 2/3 full. Sprinkle top of each with cinnamon to taste. Bake approximately 20 mins or until pick inserted in center comes out clean. Best eaten when warm but can be stored & reheated for a few seconds in the microwave.

    Serving size: 1 muffin

    Per serving: Fat 0.2 g; Cholesterol 0.2 mg; Sodium 96 mg; Diabetic Exchange: 1 1/2 starch

    How many muffins does this make?  Maybe I can get Mom (the diabetic) to try these.

    Just under the recipe name I had indicated it makes 12. Hope she likes them!

    Not a problem, I do the same thing all the time! By the way, I love the picture of the dog smoking the cigar holding the handgun.

    These sound really good also. I would omit the raisins as I can't stand them but, my guess, it wouldn't affect the taste a great deal. Hoping to try these soon!

    LOL. Yeah, my Mom raised Maltese for about 20 years, I guess; Even got some of her ideas published. She retired a few years ago (but still has a vote in AKC), and still keeps her hand in thru forums. She has one "old lady" now that just had her 17th birthday (about 119 in human years)  so I guess she knows something. Every so often somebody sends funny fotos.  Someone, who knows their way around editing software came up with that pix. I found it hilarious and kept it.  I wanted something better than the generic "plate" when I joined this group, so...

    Thanks for the suggestion.  Unfortunately, she avoids bananas because she takes a potassium supplement (prescribed). I've tried to explain that with all the russets she eats (which contains more potassium, one on one, than a banana- so says "How It's Made" on the Discovery Channel) it doesn't matter, but, she is set in her ways at 77.  I also suspect it has to do with the "ulcer diet" she was on many years ago, before the doctors were forced to cut them out (7, all bleeding out). I never saw anyone eat bananas like that until then (unless I went to the San Diego Zoo- no, seriously).  Could that be converted somehow to pumpkin? How about dates? She's a date freak!  I'm not a baking person...
