    Coconut-Blueberry Cheesecake Bars

    Coconut Blueberry Cheesecake Bars

     

    Ingredients

     

    1/2 cup butter

     

    3/4 cup crushed graham crackers

     

    1/2 cup each, flour,coconut, and chopped pecans

     

    1/4 cup sugar

     

    12-oz cream cheese, softened

     

    2/3 cup sugar

     

    4 eggs

     

    1 Tbs brandy or milk

     

    1 tsp vanilla

     

    2 cups blueberries

     

     

    Oven set on 350 and lightly grease a 13x9" pan.

     

    For the crust~  Heat the butter and remove from the heat . Combine the graham crackers, flour, coconut, and pecans and 1/4 cup sugar.  Stir in the butter mix well and press evenly into the bottom of the pan  Bake 8-10 minutes.

     

    Beat the cream cheese and 2/3 cups of sugar  on medium speed.  Add the eggs, brandy and vanilla. beat till combined.  Pour over the crust then sprinkle with the blueberries and bake for 18 -20 minutes~  Chill ~  Bhg ~  Recipe

    Sounds delicious!!  Was wondering if this could be made sugar-free?

    Wonderful my dear. I can't wait till blueberries are a little cheaper here. They should go down to $1.00 pretty soon, then I stock up.

    Gm MamaT`  I am sure that you certainly could lose that 1/4 cup that goes into the crust as there is already coconut in there so that should make it plenty sweet~  I can only suggest cutting back or using Splenda or so other type of sugar substitute~  Cream cheese really needs some kind of a sweeter when it is used in recipes like this one~ Maybe use some brown sugar mixed with the white as I believe that the brown is not as bad for you~  I am sure that  one of the other great cooks on this Bb may have some input~  Janie

    Right Hug  It's ibuprofen time~ Whisper  The arthritis in the joins is really getting worse and all of the weeding I do doesn't help~  Rosie, How's you garden coming?  I have 3 green peppers and 1 tiney, tiny eggplant starting~  Yes
