    Healthy Veggie myths, debunked

    If the low-carb diet craze of the early 2000s left you believing that potatoes equal pounds and corn and carrots are no better than candy, it's time to wake up and taste the produce. Truth is, even vegetables you may think of as nutritional duds are packed with vitamins, minerals, and phytochemicals, not to mention varied colors, flavors, and textures. If you've been avoiding these "produce outcasts," your diet--and health--are missing out. Here, we debunk the biggest myths about a few unfairly maligned vegetables--and provide easy and healthful ways to eat more of them.
     
     
    White potatoes make you fat

    One medium baked potato has only 161 calories, plus 4 g of filling fiber
    Added bonus: Chilled, cooked potato is packed with resistant starch, a fibrous substance that could help you lose weight. (For more information on resistant starch, visit prevention.com/resistantstarch.) "If you keep portion sizes in check--no more than one medium potato in a given meal--and eat the fiber-rich skin, potatoes make a satisfying, low-cal, nutrient-rich side dish," says Michelle Dudash, RD, a Gilbert, AZ-based nutritionist. They also:

     

    Fight disease
    When scientists from the USDA's Agricultural Research Service tested more than 100 potato varieties, they discovered 60 different vitamins and phytochemicals. For starters, they found flavonoids (which are credited with improving heart health and protecting against lung and prostate cancers) including quercetin, which may boost immunity.

     

    Help maintain healthy blood pressure
    Potatoes are loaded with kukoa-mines, plant chemicals that help lower blood pressure, found the USDA researchers. In addition, one medium baked potato (including the skin) provides 20% of your daily potassium, a known hyper-tension fighter.

     

    Try this: To make a fat-burning potato salad, boil new potatoes in water until cooked through. Cut into 1 2-inch slices and then quarter. Toss with olive oil, red wine vinegar, Dijon mustard, and chopped fresh parsley, and chill. Or for a hearty meal, skip the sour cream, butter, and cheese, and top a baked russet potato with vegetarian chili.

     
     
     
    Iceberg lettuce has no nutrients

    It has plenty of good-for-you compounds
    Just because darker varieties have a few more is no reason to banish it! Iceberg also:

     

    Boosts bones
    Just 1 cup of shredded iceberg lettuce delivers nearly 20% of your daily dose of vitamin K, a nutrient many women don't get enough of. When Harvard University researchers tracked the diets of more than 72,000 women, those who ate one or more servings a day of any type of lettuce (they're all rich in the vitamin) had the lowest rates of hip fracture.

     

    Protects your sight
    Iceberg lettuce is a good source of vitamin A (just 1 cup supplies 15% of your daily dose), needed to keep your vision sharp.

     

    Inches you toward "five-a-day"
    If iceberg is your favorite lettuce, don't hesitate to use it as the base of a tossed salad. "Any lettuce that keeps you eating salads is a great vehicle for getting more produce into your day," says Dawn Jackson Blatner, RD, a spokesperson for the American Dietetic Association. Remember: Even the most nutrient-rich lettuce does you no good if it ends up in the trash.

     

    Try it: Grilled! For a unique, smoky flavor, halve or quarter a head of lettuce and grill just long enough for the telltale marks to form (about 4 to 5 minutes). Remove from heat, core, chop, and dress. For an Asian twist, toss with sesame oil, grated fresh ginger, minced garlic, and rice wine vinegar.

     
     
    Carrots are loaded with sugar

    One cup of chopped raw carrots contains just 52 calories and a mere 12 g of carbohydrates
    Only half of the carbs are from natural sugar (the rest are from heart-healthy fiber and complex carbohydrates). That's fewer than you'd get in a cup of milk or a medium-size piece of fruit. Plus, the sugar in carrots comes packaged with vitamins, minerals, and fiber, unlike the excessive empty calories you'd get from foods with added sugar, such as a candy bar or cookies. They also:

     

    Benefit blood sugar
    Fiber and beta-carotene, which are both linked to improved blood sugar control, are abundant in carrots. Improve your eyes A half-cup has more than four times the amount of vision-boosting vitamin A that you need in one day.

     

    Promote colon health

    Carrots are packed with falcarinol, a phytochemical that may help protect you against colon cancer.

     

    Try this: Toss grated carrots into marinara sauce and simmer for added depth and a meaty texture (minus the fat found in beef), shred into tuna salad, or roast slices and add them to pizzas or sandwiches.

     
     
    Celery is just water

    Before the 1500s, celery was used as a medicine to treat a laundry list of ailments
    Its devotees were on to something--the crunchy veggie has a unique combination of disease-preventing vitamins, minerals, and phytochemicals. It also:

     

    Keeps your blood pressure down
    Celery contains pthalides, rare compounds that lower your blood pressure by relaxing artery walls.

     

    Lowers cancer risk
    This veggie packs a dose of apigenin, a potent phytochemical that protects against cancer by inhibiting gene mutations.

     

    Helps you stay slim
    Celery sticks can satisfy an urge to munch with virtually no calories--one large rib has just 10 calories and 1 g of filling fiber.

     

    Try this: Make a mirepoix--a flavorful base for soups, stews, and sauces often used in French cooking. Combine equal amounts of finely chopped celery, onions, and carrots. Sauté in olive oil until just softened, and proceed with your recipe.

     
     
     
    Corn is nothing more than carbs

    Sure, corn has carbs. But they're the best kind--high-quality complex carbs
    The whole plant has little in common with high fructose corn syrup, a sweetener made from corn that has had all the nutrition and fiber processed out of it. Corn does double duty as both a veggie and a whole grain, so it's loaded with fiber (one large ear has 15% of the fiber you need in a day). It also:

     

    Helps your heart
    Corn kernels have heart-healthy folate, a B-vitamin that keeps blood levels of potentially dangerous homocysteine in check--one ear has more than 10% of your needs for the day.

     

    Gives you energy
    One ear of corn has more than 25% of the RDA for the mineral thiamin, which helps your cells convert carbohydrates from food into energy.

     

    Preserves your vision
    This veggie's also a top source of zeaxanthin and lutein, plant chemicals that keep your eyes healthy by preventing age-related macular degeneration.

     

    Try this: For a simple corn salsa, toss together fresh or thawed frozen corn kernels; finely chopped jalapeño chile pepper; chopped fresh cilantro, tomato, and onion; and a pinch each of chili powder or ground cumin. Serve on top of mixed greens or grilled fish or chicken.

    Good morning. Great post Jolene. I am going to try the grilled lettece, interesting.  My favorite omelet is grilled onions, some potato cooked a little in micro then browned in skillet. Lay on one side of omelet then put some cheese on it and fold over.  Corn is core so I eat it a couple of times a week, it is really sweet now. I bought some while in Branson that the husk looked awful, but it was the best.

     

    It is raining here or it was, Really dry and is needed, there hasn't been any any in or a month. Maybe we brought it was us from Branson.

     

    Getting ready to go to TX, have family coming in. I know I have 6 weeks of dust in my house and I hate to dust. Usually when they come the bedroom were they sleep I clean it really well, wash curtains, take the matress off the bed and vacum under it, that sort of stuff. Not this time I don't have time, they will be there on the 20th.

    The whole reason I never jumped on the low carb wagon was that I couldn't have potatoes or pasta. Those are 3 of my favorite things!!!! The potato is my desert island food! LOVE THEM!! Great article Jolene!

     

    Dusta your omlet sounds yummy! I wouldn't worry about having the house clean, they are coming to see you not your housekeeping skills!!

     

    The party went great Saturday night. We had a blast and almost all the food was gone which was even better! I had some party mix left so I brought that to work today.

    back for a few, Jake's really in a mood today.     Made my library list, and was trying to work on my menu for the week.   


    Right now my problem is, there is so much good produce available and I have so many great sounding recipes to try, and I get overwhelmed!   I'm trying to put up as much as I can, I've got 6 bags each of raspberries and strawberries, and those sure will taste good in a few months when you can't get them at the store anymore.   Now we're getting New England grown green beans, summer & zucchini squashes, hopefully soon eggplants, corn & tomatoes.     We found 2 fields full of wild raspberries and black raspberries yesterday, but didn't have anything to put them in.

     

    Dusta, blech on the 6 weeks of dust.    Double blech on company   LOL    We rarely have anyone here, just my sister and my inlaws, and no matter how much I clean MIL will find the one thing I missed and comment on it.     I've never had an omelet, don't eat many eggs, unless they are in cake or some other baked goods.   My mom said I ate scrambled eggs as a kid, but I don't eat them now. 

     

    Jen, glad the party went well!   YAY for no leftovers   :)   When Tim's parents come, there's always too much so I try to send as much as I can home with them, but Tim is pretty good about eating the non vegetable leftovers.

     

    Had a few mins to peek at the posts from yesterday afternoon, Jake is raging so I'm going to comment fast and apologize if I miss anyone!

     

    Kris, glad that you are finding the HL helpful!    99% of my recipes I get from Cooking Light, or Light & Tasty (Healthy Cooking, whatever the heck they call it now  LOL).    When you have a few mins, just go poke around the website/page, I always find something new and fun to try, even if I don't have anything specific in mind!

    Waving to Jenndem, nice to see you pop in to chat with us!    How old is your DD?   My little guy is almost 5 and it's rare that he sleeps through the night, but he still manages to get up at the crack of dawn    LOL       We've been doing date days/nights for about a year, we had a rough patch and my parents/sis offered to take Jake every other Saturday so we could go do something just the 2 of us.     They do overnights about half a dozen times a year too.    MIL is salivating over the idea of babysitting Jake overnight or all day, but she's can barely handle him for an hour or so.    Long story there, but she puts the "M" in Monster-in-law!

     

    Ok, I guess my time at the computer is over for a while.    Will try to get back later, I should have done my menu planning yesterday when he was gone...

    Jen I'm with you on this one! If I had to cut out my potatos I think I would just die away!!! LOL! Potatos is my fav. next to homeade chicken'n'noodles!!!! Of course you can eat the noodles on top of mashed potatos and make it even better! LOL! :)

     

    We had a busy weekend and came to work today and have a bunch of stuff to do.....

    Jet that just happens to be #1 all time favorite meal!! My grandma ALWAYS make that for the holidays and my grandpa would always say he had to get up at 5am to start peeling potatoes so there would be enough for me! LOL! I love my grandma's and I've watched her make it 1000 times but mine never tastes as good as hers. Now I want it to be Thanksgiving so I can have some! LOL!

    I don't want them to choke on dust when they sleep. They are only going to be here a couple of nights and that is good. I don't get any help.

     

    Jolene my omelets are egg whites, can't stand yolks, smell like wet chicken feathers.

     

    As you know I am close to my goal weight and is at the top for my age and height. This last week I have been told, more than once, I am too skinny, NOT,NOT, NOT.  That grates on my last nerve and I really want to slap someone. Someone told me tell them thanks and kiss them. Man I sound mean today.

    LOL Jen.....it does sound good doesn't it! :) We always have it for 'special' meals..... Yummmm! Forget the turkey, just give me potatos and noodles!!!!

     

    I went back and was reading last weeks post, and seen where Jolene had a bad meal at a diner......well Saturday we were on the road and decided to stop at a DQ to grab a sandwich and some ice cream (it was soooooo hot outside!!!) anyway I ordered the chili cheese dog and a drink. I took one bite out of my sandwich and seen that the bread was GREEN!!!!! It was moldy!!!! Needless to say that one bite didn't stay in my mouth!!! I took it back up to the counter and they asked if i wanted another one!!!!! WTW???? So I ended up eating french fries instead!! LOL! I wasn't to happy needless to say! Later on that evening we ended up stoping at Denny's and got a really good meal, so the day ended up good...:)

    Hey guys!  I've been popping in a few times here and there the past couple days and reading.  GREAT article, Jolene!  Like everyone else, I'm so glad to read that potatoes aren't some wicked, fat-producing food!!  And the iceburg lettuce - I always felt bad that we couldn't afford the nicer, prettier lettuce that was much more "healthy".  Sounds like I can feel just fine about serving/eating iceburg all I want!

     

    I'm trying - once again - to lose some weight.  My sister just found out that she probably has diabetes, and she weighs less than I do (she's at 145, I'm at 174 - honestly, you wouldn't guess it to look at me, I don't know where it hides), and her Dr. told her she needed to lose some weight.  She's also nursing a 5 mo old :)  Anyways, even though I'm healthy, I realized that I'd better start working to at least get in shape.  I've started eating more fruits, and plan to buy more fruits to have them here so I will/can eat them.  I can peaches & pears (don't care so much for applesauce), and have tons of frozen cherries from the cherry trees back on the farm, but I will also buy fresh stuff like bananas, grapes, in-season things like blueberries, nectarines, etc.  Last week my "dessert" was a nectarine diced, with a little dab of cool whip lite.  I also started weighing myself EVERY morning and I have a piece of graph paper hanging on the frige where I color in a block to correspond w/ my weight.  Red color is "up" and green is "down".  So far only 2 green blocks in the last week, and they are the same block since I went up a few lbs after our annual date night to Outback.  I don't color in green again until I've come back down to even with the previous green block.  I've heard that the first 2 weeks are the slowest, then it goes faster from there?  Is that true?  I sure hope so!  I've also started walking everyday.  It is my new RULE that I HAVE to do.  Well, except for Sun, and Sat if we're gone or whatever.   I need to drive my route and see how much I am walking.  I think it's probably close to a mile, maybe 3/4 of a mile.  I want to add to it this week since I've gotten "used" to this much last week.  I'm throwing a little running in there, too, for some good cardio.  Friday I was able to run what I'd been running pretty easily, so that was encouraging!  I wasn't huffing and puffing and about to die when I got done!!  Ha ha!  And making sure I drink at least 5 big glasses of water every day, and doing some exercises daily.

     

    I talked to DH about it, and he said I should reward myself for every 5 lbs. lost.  So, I need to get 5 lbs. off so I can pick a reward!!  Probably nothing big - maybe a necklace or earrings from the cheap racks at WalMart. Stick out tongue

     

    Well, it is not raining anymore.  It was raining earlier this mroning and I was disappointed.  Now I need to get out and get it done before it gets hot and muggy.

    Hi all,

    I am new as of last Friday evening.  So thought I'd stop by and introduce myself.

     

    My name is Joan, I'm married, next month will be 10 years.  We live in Louisville, KY, my husband Bob is quite a bit older than I am, but that is o.k. too since it seems to work for us.  He has 3 sons from his first marriage that ended only due to his wife passing away.  Those guys are more like brothers to me since they are so close to my own age.

    I do Weight Watchers, in the past 10 years I've gone from 327 pounds to my lowest weight of 205, but as of Saturday I'm at 212.  In April of this year, I had a total hip replacement, and have done great with recovery and have been going to the gym for the past five weeks at 5 a.m. each morning.  I will be having a total knee replacement in August.  So trying to build that leg/thigh muscle up as much as possible.

    I love to eat, sweets are my downfall.  I tell everyone I know just exactly how someone on drugs feel due to that seems to be how I am when it comes to sweets, that first bite and I have to have the entire box of whatever it was.

    Got back from my walk, started a load of laundry, took a shower and just finished a wrap for lunch.   I put a castiron skillet on the stove on about med, place the tortilla in it, put down a little cheese, then the meat, then the onion.  I let it heat up until the cheese it melted and the bottom starts to toast.  I take it off and pile on spinach & a little lite ranch dressing.  Oh, it is so good!  Soft and crunchy at the same time, and the melted cheese... ooooooh Angel

     

    My knee didn't bother me on my walk/run today.  Last week I took the dog with me, and with all his running around and wanting to stop here or run off to there, I think I put some extra strain on it, b/c it ached like crazy for a while.  And I'm trying to stay in the middle of the road where it's more level as much as I can to avoid the sloped edges.  I think that effects it, too, since it's always the same knee.

     

    Well, I need to go hang out the laundry, then I need to start a batch of bread.  I'm going away later this week to visit my sister for several days and need to make sure DH has food that he can "cook" (lol, more like "either eat cold or microwave") to survive on while I'm gone.  He usually does pretty good about making his own breakfast and lunch while I'm away.

    Back to work again! :) Went to lunch break and ate pretty good for a buffet! LOL! I had 2 small pc. of fried fish (fish is good for you right? :)  ), broc. and cauil. mixture, small helping of noodles, 1 pc. wheat bread, 1 spoonful of slaw, 1 spoon full of cucumber salad. and for dessert I only had ONE cookie! This was at an Amish buffet so you can imagine my restraint! LOL! But I was full, so I quit eating and kicked in my self control!!! :)
