    TOH Lemony Zucchini Bread review and minor change

    Made this recipe today for the first time, and wow. Love it. My one change to the ingredients was that instead of the entire 1 c. of oil, I substituted 1/2 c. unsweetened applesauce and then the 1/2 c. oil. It still worked perfectly. Next time I might pare it down more to using just 1/4 c. of oil--we'll see! Instead of making the 2 large loaves, I made the one large one and 4 of the mini loaves, which we have an easier time getting away with!!  

     

    Make this recipe--it's totally worth it.


    Ingredients:

    • 4 cups all-purpose flour
    • 1-1/2 cups sugar
    • 1 package (3.4 ounces) instant lemon pudding mix
    • 1-1/2 teaspoons baking soda
    • 1 teaspoon baking powder
    • 1 teaspoon salt
    • 4 eggs
    • 1-1/4 cups milk
    • 1 cup vegetable oil
    • 3 tablespoons lemon juice
    • 1 teaspoon lemon extract
    • 2 cups shredded zucchini
    • 1/4 cup poppy seeds
    • 2 teaspoons grated lemon peel

    Directions:

    In a large bowl, combine the flour, sugar, pudding mix, baking soda, baking powder and salt. In another bowl, whisk the eggs, milk, oil, lemon juice and extract. Stir into dry ingredients just until moistened. Fold in the zucchini, poppy seeds and lemon peel.
        Pour into two greased 9-in. x 5-in. x 3-in. loaf pans. Bake at 350° for 50-55 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely. Yield: 2 loaves.

    Thanks for the review! I have been eyeing this recipe, and I have plenty of zuchinni! :)

    This is one of my favorites too......a friend had given me a box of instant orange pudding so I used that and substituted orange juice for the lemon juice and orange peel for the lemon peel....go figure-it came out WONDERFUL-now we can't get the pudding any more! 

    Thanks for the tip on the applesauce-will use that for sure! 

    I'm waiting for the garden to start giving me some zucchini so I can make it again.....and I'm gonna use the mini loaf pans since it's just the 2 of us!

    I made this today and it is wonderful! Do poppy seeds get rancid? I had a container of them, but when I opened it, it smelled sorta rancid like. I didn't want to ruin the bread, so I made two smaller loaves and added some poppy seed to them and it  tastes okay. Either way, the bread is so moist and lemony. I think some chopped pecans and a hint of cinnamon would be good in it too. Thanks for the recipe, I will be using it again.

    Louise-I've had poppy seeds go bad on me....and the doggone things are so expensive too!  From that fatal time on, I keep them in the refrigerator after I open them and have had no problem whatsoever.....I do the same with sesame seeds-just in case!Wink

    You add ins for this bread sound really good too!  Isn't it yummy?  Can't wait for my zucchini to start producing in the garden-this will be one I'll make for the freezer.....gonna make a bunch of mini loaves I think.  I also want to start experimenting with different pudding flavors too!

    Weezerly and Carol,

    Keep your poppy seeds and sesame seeds in the freezer, and you'll never have any problem with them going bad! You are right...they are too expensive to waste!

    Thanks for the good advice about keeping the poppy seeds in the refrigerator or freezer. I keep other spices in the refrigerator, don't know why I didn't think of these. Duh! I priced a new bottle in the store yesterday before I made this bread and a very small container was $3.85. It probably didn't even contain the 1/4 cup. That's why I used a very little of the old seed I already had. I am going to discard it today tho. I have some sesame seeds that are probably rancid too! I am making these breads to freeze for later too. I also shared part of the large loaf with the neighbor. I am making the pineapple zucchini one today to try. I love getting all these new ideas from the BB. My zucchini plants are really outdoing themselves!

    LUCKY YOU Louise!  Sounds like the zucchini at your place is bustin' out all over!  I hope mine do....soon........there are SO many good things to do with it!  There's a recipe for Zucchini Pie and Blueberry Zucchini Bread on my "favorites" thread a ways back if you've run out of ideas for how to use some more of your bounty up-both are tried and true and delicious-also, have you tried the zucchini bread with cream cheese in it?  SO YUMMY!  I can't remember if I put that one on my favorites or not.....guess I'd better check!  Both of the breads freeze great too!

    Thank you Carol, I have already made the blueberry zucchini bread. It is wonderful too. I have the extra loaf in the freezer. The cream cheese one is a favorite of ours too. I thought it couldn't be beat, but every recipe I try is right up there with it. They are all good. If I don't freeze them, we eat them all up! Yes, I am lucky, I have zucchini to give away, but the neighbors zucchini are bearing now, so I make the bread and take it to them. Nobody has refused me yet and a couple of them wanted the recipes, so I take the recipes along with the raw zucchini to make it with. Do you have John Wolverine's recipe for zucchini pie? It is great too. I've made it several times along with several casseroles. I will post John's recipe again if you don't have it. It is easier to type in a recipe than to try to find it in the search (at least for me). Have a good day.

    Sounds like we bake the same things with zucchini-those breads are 2 of our favorites-and anyone who tries them-too! 

    No I don't remember seeing John's recipe for zucchini pie......always looking for new recipes to use them!  I can try searching........don't know how good I'll be at it!!!!!!Embarrassed

    Carol I will post John's (Wolverine) zucchini pie on a separate post for you and for anyone else who hasn't tried it. It is very T & T and my granddaughter's practically inhale  it. I MUST make it every time they come to see me now.

    I found it and copied it Louise-it does sound really good!  Thanks so much for posting it!  You can NEVER have too many different recipes for zucchini!Wink
