    ISO: Hot shredded chicken sandwiches

    I am searching for a shredded chicken recipe like the kind you get at fairs and bazaars?  I have three chickens in my freezer that need to be cooked and I thought this would be a good way to use the meat.  After cooking and deboning, what else should I add besides some broth, salt and pepper?  Would dry breadcrumbs or buttery crackers help bind it together? I know I'm being vague, but I'm pretty clueless on how to make this and not ruin all that chicken meat experimenting!!  Could anyone give me a tried and true recipe?  Sue

    I don't know if this is like the one that you get at your bazaars, but I've tried this and liked it very much.

    Hot Shredded Chicken Sandwiches In CROCKPOT (EXCELLENT!!!)

    I made this easy crockpot dish yesterday! Boy was it good! I used 3 soupcans of water,(for the water/broth called for and added 2 t. chicken base.) and 2 cups cooked chicken.

    Served on toasted buns.

    Hot Shredded Chicken Sandwiches


    This is the way we have made our Hot Shredded Chicken sandwiches forever.

    1 deboned Chicken or 50 oz. of canned chicken.
    2 cans cream of chicken soup
    1 1/2 cups water
    1 pack Stove top chicken stuffing mix
    Salt and pepper to taste
    1/2 tube Ritz crackers, crushed
    1 to 2 C. Chicken broth.

    Mix all together in Crock pot and cook of low for several hours or until hot. Stir in between to keep from sticking to sides. If you grease your crockpot before putting the ingredients in it will help.
    Serve on bread or buns.

    These 2 are from the bb and I've tried both and they are very good. The 1st one I'm sure you can use whole chicken, but maybe cut up?

     

    CROCK POT CHICKEN SANDWICHES

    4 bone in chicken thighs


    4 bone in chicken breasts


    1 envelope onion soup mix


    1/4 tsp garlic salt


    1/4 cup Italian salad dressing


    1/4 cup water


    12 hamburger buns

     



    Place chicken pieces in crock pot.(You can remove the skin. I ALWAYS do)
    Sprinkle the garlic salt and onion soup mix over the chicken.
    Pour salad dressing and water over the chicken.
    Cover and cook on low for 7-8 hours.
    Remove chicken and cool slightly.
    Shred chicken from the bones, and return to crock po.t
    Serve on hamburger buns

    (Her) Note: I leave these in longer than 8 hours when I am working and they turn out fine.

    (My) Note: I used all bone in, skin off chicken breasts. This is very good!

    HOT CHIX SANDWICH

    3/4 Cup Chopped Chicken (She has used good canned chicken with good results)


    1/2 cup grated Cheddar Cheese


    Chopped onion to taste


    1/3 cup finely chopped celery


    1 teas lemon juice


    1/4 Cup Mayo


    Salt and Pepper to taste

     



    Stir mixture together until well blended. Butter 6 sandwich buns (or more tea buns). Spread filling on buns evenly. Wrap each sandwich in foil and refrigerate. When ready to serve, place sandwiches in cold oven and turn to 350 degrees. When the oven comes to temperature, the sandwiches are hot and ready. (If warming more than the 6 sandwiches, or equivalent smaller buns, the time may need to be increased according to the number of sandwiches and your oven (I did).  *This is easy to make ahead of time.
