Can't go wrong with brownie sundaes.  Use either vanilla, mint chocolate chip, or peppermint ice cream.

My sister makes this and EVERYONE loves it......EVERY TIME! I don't even know what to call it.....maybe its a sort of trifle. I call it Pineapple dessert, though you can substitute strawberries. My sister has used both on occasion.

You will need Angel food cake, vanilla pudding mix, crushed pineapple and Cool whip.

Break the angel food cake into small pieces and layer the bottom of a 9 x 13 pan with it. Sorry there are no measurements for this, but seriously, anything you do will be loved! Obviously if you are making a bigger pan, you'll need more cake!

Then drain the pineapple really really well!!!! Spoon the pineapple over top of the cake. Mix the vanilla pudding per the directions on the box(s) and then spoon/spread this over the pineapple. Spread cool whip over the top and refrigerate several hours or overnight.

My sister has also done this in a deeper pan with more layers, using strawberries also.

I know it sounds extremlely simple, but this dessert goes before any of the others! It's great for summertime because it is so cool and refreshing!

    Cobbler Cake

1 box yellow butter cake mix

2 cans pie filling of your choice ( we like apples or cherries)

    2 sticks butter, melted

1/2 c or so of nuts (we like pecans)

Oven to 350.  Spread the pie filling into a 9x13 baking dish.  Sprinkle the dry cake mix over the top to completely cover the pan.  Melt the butter and pour over the top.  Sprinkle the nuts on top of that.  Bake for about 30-40 minutes until golden around the edges.

This is awesome served warm with ice cream or whipped cream.  Everytime I make this, people ask for the recipe.  It is also one my kids enjoy making.

Make a cake mix just like the box says but divide it in half and bake in two 9x13 cake pans.  Cook completely and invert on a plate or cake board.  Frost cake with coolwhip.  Top with fresh fruit.  I made this with bananas, strawberries and kiwi fruit this week for 50 people and everyone loved it.  You can choose the flavor of cake and selections of fruit based on your own families tastes.

    Hope this helps.

I keep a multi-batch box on Ghirdelli triple chocolate brownies in the cupboard....I think the box has 4 pouches of 8 X 8 mixes....can't beat them.....or I buy Betty Crocker dark chocolate brownie mix and add 1/2 cup each semi-sweet and dark chocolate chips...yummy....

This is very quick and easy and always a hit.

    Chocolate Mousse Pie

    1½ cups milk

1 pkg. Jello Instant Chocolate Pudding (4 serving size)

    1 cup Cool Whip

    1 graham cracker crust

Add pudding mix to milk and beat with a wire whisk until blended and thickened, about 2 minutes. Fold in Cool Whip until well blended. Spoon into crust and chill several hours. I usually top the pie with the remaining Cool Whip before serving. At times I will just spoon it into a serving bowl.

Can't get much easier than grilled fruit with a scoop of ice cream.

I just toss halved apples, pears or peaches--or pineapple slices or spears--on the grill (on very low or off) as we eat.  Top the warm fruit with vanilla, butter crunch, butter almond or other favorite ice cream, maybe toss on some nuts, syrup or coconut (or even granola).  And you've got a great, easy, delicious, dessert.

    Souchef:
    Chocolate Mousse Pie

Anything makes an eye-appealing dessert served in parfait glasses.  Basically I take the ingredients for Souchef's pie and layer them in the parfait glasses, (pudding, crumbs, Cool Whip, repeat layers) adding anything else that looks good (chopped nuts, coconut, cherry on top, etc.)  Serve with an ice tea spoon and people think you've slaved.Wink

A Mrs Smith's pie...cook according to directions...take out of oven place each piece on a pretty plate.  while still warm but not hot...do some swirls of Carmel sauce and shopped pecans, a dip of good vanilla ice cream, a tat more Carmel sauce and pecans, dollop of whipped topping and a mint leaf!  Yummy!  Your guests will swoon!

I combined a couple of recipes and made this and everyone loved it.

    Extra Special Dump Cake

    1 can pineapple chunks, drained

    2 cans sliced peaches, drained

    2 cans sliced pears, drained

    1 can cherry pie filling

    1 can apple pie filling

    1 box yellow cake mix

    1/2 stick butter

Combine all fruit in 13x9x2 baking dish.  Sprinkle with cake mix. Cut butter into thin slices and place all over dish.  Bake at 350 degrees for 30 minutes or until golden brown.  Let cool for about 45 minutes then serve with vanilla ice cream or whipped cream.

I discovered this easy "recipe" last Thanksgiving. DMIL ordered her ham from somewhere, cant remember right now,and was given a carmel apple pie along with it. It was free with her order, but by itself it was $15! Thats too much $$ for a pie,IMO. But,OMGracious!! It was yummy! I have since done just what Molly suggested. A little of the caramel ice cream topping warmed up,some toasted pecans,a little vanilla ice cream on the side. MMMMM! I think I know what'll be on my grocery list tomorrow!

    Chocolate Coma Pie

Melt one cup of chocolate chips (I prefer semi sweet), stir into one regular tub of coolwhip and pile into a graham crust. Chill till serving time. Ohhhh soooo goooooood. You could also use peanut butter instead of chocolate chips.

Reality is for people who lack imagination.
