Bacon And Crab Stuffed Potato Bites

Ingredients:
12 small red potatoes, about 2 inches in diameter
2 tablespoons Dijon mustard
1 tablespoon olive oil
1 teaspoon Old Bay seasoning
***Bacon Crabmeat Filling***
4 ounces cream cheese, softened
1 cup shredded Cheddar cheese
5 slices bacon, cooked and crumbled
8 ounces fresh crabmeat, flaked
1 tablespoon Dijon mustard
2 teaspoons Old Bay seasoning
1/4 cup chopped green onions

Directions:
Preheat oven to 425°.
Cut the potatoes in half. With a teaspoon or melon baller scoop out the middle of each potato half, leaving about 1/4 inch of the edge. Place the potatoes cut-side up in a shallow roasting pan.
Combine the mustard, olive oil and seasoning and mix well. Brush the tops of the potatoes with the mustard mixture. Bake until the potatoes are tender, about 40 minutes. Remove from oven and set aside.
For the Filling: Combine all filling ingredients in a small bowl and mix lightly until combined. Place about 1 to 2 tablespoons of the filling in the center of each potato. (The amount of filling required varies according to the size of the potato halves.)
Return the stuffed potatoes to the roasting pan and bake at 425° for an additional 20 minutes, or until the cheese is melted.
Garnish with minced green onions, if desired.
