    REC: Lime Quick Bread

      Lime Quick Bread

    2/3 c. butter, melted
    3 c. flour
    2 Tbsp. lime zest
    1⁄4 c. lime juice (fresh)
    1 c. chopped nuts
    2 1⁄2 tsp. baking powder
    4 eggs
    1 tsp. salt
    3⁄4 c. milk
    2 c. sugar
    1⁄2 tsp. vanilla extract

    Blend butter and sugar. Add eggs and beat well. Stir in vanilla and grated rind. Combine dry ingredients and add alternately with milk. Add lime juice so it doesn't curdle. Fold in nuts. Bake in 2 greased loaf pans (meatloaf type) or 3 smaller loaf pans at 350 degrees for 50 to 60 minutes or until done.

    This sounds very good... I was just thinking I needed a recipe with lime because I have a lime on the counter that needs to get used up!

    This looks so good ~ I've had a lime quick bread recipe in my too try pile for awhile and just haven't made it.  lol, we don't need the extra temptation at home and there's been no potlucks at work lately!
