    Daily Low Carb Chat July 22nd

    Good Morning,

     

    We had a storm come thru yesterday afternoon so I shut the computer down early. I ended up watching some TV I normally wouldn't and so I am going to put on a few recipes from Blaine's Low Carb Kitchen today. As of last nights show he had lost about 60 lbs I think it was.

     

    We are going out to lunch with DD and DGD it's gift for our anniverary.

    I never would have thought about running frozen meat through the food processor so I thought this  avery good tip.

     

    Last Minute Chicken and Pork Stir Fry

    1 lb. boneless chicken tenders - frozen
    1 lb. boneless pork chops - frozen
    1 12 oz. bag fresh pre-cut broccoli
    1 12 oz. bag julienne vegetable mix (carrots, broccoli, cauliflower & cabbage) (note: if using frozen vegetables be sure to allow moisture to evaporate before cooking)
    1 6 oz. container whole button mushrooms
    5 tbsp. peanut oil
    1 tsp. salt
    1 tsp. pepper
    2 tbsp. soy flour
    4 tbsp. soy sauce
    2 tbsp. chopped garlic from jar
    2 tbsp. sesame oil
    1 tsp. crushed red pepper
    1 tbsp. roasted sesame seeds

    Push frozen chicken and pork through food processor using single slice disk attachment with machine on pulse. Take sliced meat from processor and place 1/2 of meat mixture in a gallon plastic bag. Toss with 1/2 tsp. salt and 1/2 tsp. pepper then 1 tbsp. soy flour. Shake to coat. Repeat with second batch of meat mixture. Preheat 12" non-stick skillet or Wok to medium high. In batches so as not to crowd, stir fry meat mixture with 1 tbsp. peanut oil and transfer to large serving platter (approximately 3 batches which will require 1 tbsp. peanut oil for each). Takes 1-2 minutes for each batch.

    Remove cooked meat from pan and set aside. Add 1 tbsp. peanut oil to pan with broccoli and julienne vegetables. Cover skillet with lid 3 - 4 minutes. Remove lid and stir fry by tossing consistently for 1 minute. Clear area in center of pan with spoon and add garlic and red pepper - cook 1 minute. Toss and then add mushrooms, soy sauce, sesame oil and stir fried meat back to pan. Cover and heat 2 - 3 minutes. Turn off heat and transfer stir fry to large serving platter and garnish with roasted sesame seeds. Serve immediately.

    Yields 6 servings - approximately 5.2 net carbs per serving

    Low Carb Stuffed Pizza

    3/4 cup olive oil to fry
    6 low carb tortillas
    1 - 14.5 oz. can diced tomatoes
    1/4 tsp. salt
    1/4 tsp. fresh cracked pepper
    1 tsp. garlic powder
    1 tbsp. Parmesan cheese
    1 8 oz. bag pre-shredded Italian Blend Cheese
    48 slices pre-cut pepperoni

    Preheat oven to 375 degrees. Stack tortillas and puncture with a fork about a dozen times. Fry low carb tortillas one at a time in about 1 tbsp. olive oil in a 10" nonstick pan over medium high heat until brown and crisp. Repeat adding 1 tbsp. olive oil to pan until all tortillas are brown and crisp. Make sure you cook tortillas on both sides then drain on paper towels. Season tomatoes with Parmesan cheese, garlic powder, salt and pepper. Put three tortillas on cookie sheets. Spread 2 tablespoons of tomatoes on each tortilla and top with 1/4 cup grated cheese and 6-8 pieces of pre-cut pepperoni. Top 3 made pizzas with 3 other tortillas and repeat with sauce, cheese and pepperoni. You will have a total of 3 stuffed pizzas. Cook on cookie sheets in preheated oven for 10 minutes. Cut each pizza in half and serve.

    Yields 6 servings - approximately 10 net carbs per each serving

    Hi Carol and all to come!  I had such a blue day yesterday.  I don't know if it was just the letdown after a busy and kind of stressful weekend, or if it's wacky hormones, but I was not myself.  Hoping today is better! 

     If you haven't checked out this site, please do.  There are a lot of great recipes there.  I copied a number of them and will be heading to the grocery store again.  (it seems I never really have exactly what I need for a recipe I want to try!)

    Hi Connie,

     

    Sorry you have been feeling blue. I think most of us get that way every so often and the letdown after a fun and stressful time can do it usually.

    Spicy Poached Shrimp with Butter

    2 lbs. shrimp — 31 - 40 shrimp - uncooked, split and de-veined (can buy in most major supermarkets)
    Juice of one lemon
    6 tbsp. Maryland crab spice
    3 stalks celery
    1 stick unsalted butter
    2 tbsp. Ranch dressing for celery

    Bring 4 quarts water to rolling boil in an 8 quart pot. Season water with 3 tablespoons Maryland crab spice and 1/2 a lemon squeezed. Put 2 lbs. shrimp in pot and turn off heat. Let shrimp cook in water for 4-5 minutes. While shrimp are cooking, microwave 1 stick butter in a bowl for 30-60 seconds until melted. Remove shrimp with slotted spoon and quickly sprinkle more Maryland spice on shrimp while they are still wet. Serve shrimp hot with small ramekins of warm butter and ranch dressing. Garnish with celery slices.

    Yields 6 servings - approximately less than one carb per serving

    The recipes sound good, and I have saved the site to my favorites.

    No fun to have a down day....I have lately, and I honestly think it is because I have so many photos to work on, and I can't make myself do them....like hundreds.  I go down the basment and look at them and then just turn around and come back upstairs.  On flylady, a friend told me in detail how she did it, and I WILL do them! 

    Meals on wheels to deliver today, then play bridge.  There can be as many as 25 deliveries for our route...we do the south part of our little town.

    Good afternoon Carol, Connie, Janet, Alphy & all ~

     

    It's doing some rumbling outside right now & it's getting very dark.  Suppose that means a storm???  LOL  One good thing... at least I haven't had to water in the last few days.  Wow, thanks for all the recipes, Carol.  That stuffed pizza one looks really good.  I'll have to give it a try.

     

    Hope you're feeling better today Connie.  I think we all have days like that.  Sure glad it doesn't last.  I have a good friend who has mood swings really bad and I feel so sorry for her.  She had been doing pretty good for the last few months, but last week she told me she's been down in the dumps.  I'm seeing her tomorrow.  I'm getting her to join the Harmonics with me.  I go to Linda's L/C post a lot.  She has some really good recipes.

     

    Boy, it's been overcast here too for the past several days, Janet.  Although with this humidity, I'm kind of glad.  Otherwise, it would be like a blast furnace.

     

    We're having fish tonight.  I've got some broccoli that I really need to cook up, so it's nothing special, just something easy and good for us.  I've got more laundry to do this afternoon then I'll grab my book, sit for a while on the porch & pretend I'm in Canada.  Smile  Enjoy your day!

     Hi Carol and all,

    I just wanted to stop in and tell ya why I haven't been here for a couple of days.  John was working on some computers for his new business.  So he had the towers here and hooked them up to my monitor.  So my computer was basically down for a day and a half.  Anyway, it's late now, so I'll come read this tomorrow.  Hope everyone has a great night.
