    Rec - Star's Blueberry Hot Bread not just for blueberries anymore!

     This is Star's original post - Blueberry Hot Bread.  I made the blueberry recipe and it was absolutely fantastic.  The only thing I changed then was to add vanilla...but I needn't have.  It doesn't need it.  I have made this recipe again, using cut-up sweet cherries this time.  It is just as good!!!  I mixed the cut-up cherries with the flour and they didn't sink - at all!  The loaf turned out beautifully!!!  Try it with blueberries - or cherries, but you gotta try this!    Diana

    RBI's Blueberry Hot Bread

    Not as sweet as a cake, but sweeter than a bread, this wonderful blueberry bread is served warm and buttered. A favorite country inn of mine serves it up in summer when blueberries are plump and plentiful. It truly is an eye-opener and I think you'll enjoy serving it too.

     

    2 loaf pans

     

    Blueberry Hot Bread

     

    2 eggs

    1 cup granulated sugar

    1 cup milk

    1/4 cup melted butter

    3 cups sifted flour

    1 teaspoon salt

    4 teaspoons baking powder

    2 cups blueberries (fresh or frozen without syrup)

     

     

     

    Beat together the eggs and sugar, until the mixture loses its granular consistency.

    Add milk and melted butter.

    Sift together flour, salt, baking powder.

    Add liquid ingredients, mix to combine.

    Toss blueberries in a little flour to keep them from sinking to the bottom of the bread.

    Add them to the batter and pour into 2 regular well-greased loaf pans.

    Preheat the oven to 350 degrees and bake from 30-40 minutes or until cake tester comes out clean in the center.

    Serve warm with butter.

    Freezes very well.

    I tried this recipe because I had a pint of blueberries about to go bad and I love it! The bread has a great consistency, almost like a huge muffin! Next time I think I will bake it in one larger pan so I can slice it and make French Toast out of it. Yummy

     

    Since I had a pint of blueberries that were about to go bad, I made this on 7/15/08. The directions were very easy to follow, and right to the point. I coated the berries with a little of the flour from amount listed in the recipe.The baking time of 40 minutes was the perfect amount of time for my oven.After baking, I took a slightly warm slice and spread a little margarine on it. It was so good. I do think however the next time this is made another 1/4 cup of sugar will be added. Thank you so much for posting

    WONDERFUL IDEA Diana! I never would have given cherries a thought! 

    Just got back from picking some GORGEOUS blueberries this morning ....... most of them will go in the freezer but hope this humidity will break soon so I can try this...wanna keep some of these berries in the fridge at the ready-I can't WAIT to try it!!!

    Carol - You won't be sorry.  This is really good.  It's as good cold with butter on it as it is still warm.  My DH poured cream on a warm slice of the blueberry bread, but you have to forgive him for that - he's English lol.  Lucky you - being able to pick blueberries!!

    Diana-no matter how you slice it-no pun intended!-your adding cherries sounds GREAT!  That's on my ever growing "must try" list too-and the cherries we've gotten so far this year have been out of this world-what a way to make them even better! 

    I have blueberries all over the kitchen counter on every cookie sheet I own drying out so I can throw them in the freezer....the picking was SO easy I could have stayed there all day!  Will see what I have for an amount when I bag them up then may go back and pick some just for immediate use.  You should have seen them-the branches were bending over and touching the ground because they were so FULL!  And there's plenty more to come too by the looks-they'll probably be picking for another good month!  Guess it was a good year for them this year.  Wish I could PM you some!!!!!!!!!Smile

    I'm so jealous...and I'll take the blueberries by PM lol.  Do you have your own bushes or are these blueberries growing wild?  We have bilberries or whinberries over here - very small blueberry-type berries.  To buy them in stores, however, is very expensive (as are the imported blueberries).  Last year DH and I picked wild bilberries (the bilberry bushes grow among the heather on the moors) but we didn't even get enough to make a pie.

    Star, Thanks to you I am going to look into a blueberry bush for next year`~~  Do thye grow like the wild blackberry bushes nand do they have any thorns on the branches~  I have to get armed when I pick our wild blackberries, they are worth it but I get stuck everytime~  Thanks Janie

    Diana....Oh how I WISH this was my blueberry patch-sadly no. The blueberries were high bush cultivated berries that I picked yesterday-took 2 hours to pick 12 quarts-some of them were HUGE-the berries along with the bushes!!!  my daughter picked some low bush blueberries for me last Saturday-they're more like the wild blueberries-it took her about 2 hours (in the heat and humidity, which she said she doesn't mind but even SHE cried UNCLE after a couple hours-as did my 8 year old grandson) to pick 2 quarts.

    Janie-there aren't any thorns on blueberry bushes.....I think it depends what kind of berries you choose as to how the bush grows-low to the ground or high-but they're super easy to pick with the high bush.....I'm trying to think of what I can compare the high bush berries to and I can't think of anything-I must need more coffee to jump start my brain! 

    My godmother used to have raspberry bushes and we used to go help her pick so I can feel your pain-literally-with the thorns.......I'd feel like the bush was reaching out and attacking me!  But OH were the raspberries GOOD!!!!!!!!!!!!!

    I'm really thinking I'd like to grab some blueberry bushes and give them a try here too-

    Carol,Coffee Thanks for the info and that's Great now I'll have a Blueberry Bush Buddy to compare notes with~  Going to give Chef a heads up as well as she too is interested in purchasing one~

    Big Smile.....Star sure does have us blueberry brained Janie!  But that's not a bad thing-especially since I have those 12 qts. to bag up this morning-they're on cookie sheets (yup-every one I had in the house with sides!) right now freezing so I'm headin' downstairs with my trusty measuring cup and freezer bags to divy them up-2 cups/bag-for baking.

    Ya know, when my mom sold her house, there were 3 high bush blueberry bushes there-I had asked my husband can't we take these home and transplant them?  He said no it wouldn't work.....that's translation for no, I don't feel like digging them up.  I KICK myself for not getting the shovel and doing it myself!  Then when I was telling him yesterday how gorgeous these bushes were and how I wished we'd taken the ones from my Mom's-he said ya, we should have-they probably would have grown well here.......what the Tongue TiedIndifferent???????????????  Men........sometimes.......................

    I'm gonna try this let's get blueberry bushes again thing with him when he's on vacation-let's see if it works this time.....if it does.....sure, I'll be your Blueberry Bush Buddy!!!!!!!!!

    Diana, thank you for another great review! I love cherries too and I bet that they are just beautiful in this bread. I'm glad they didn't sink as much either. When you like a recipe well enough to make it again so soon, that's high praise indeed!

     

    Janie, Blueberry Brained!!! I laughed out loud...I'm still laughing, LOL. That was so cute! This time of year I am ALWAYS blueberry brained, :). Carol, don't leave me out of the Blueberry Bush Buddies, ok?

     

    They are just so good. I take some fresh ones to work every night and we have them cold out of the fridge for our middle of the night snack at work. Last night there were four of us, so I washed them and divided them into four cups and you should have heard us oooohing and aaaahing...they have such a great flavor this year....sweet and tart and just bursting with flavor. I have four gallons in my freezer now and I'm not going to have room for much more...I have given away at least that many. But I keep picking them. I don't have any trouble finding someone to give them too, though.

     

    Janie, they are so EASY to pick when you have a good crop. I have a basket that I have rigged that hangs around my neck and down to waist level. That leaves both hands free. There are no thorns on the bushes, and many of ours tower above my head. My BIL says they need to be cut back some. But the clusters of blueberries are huge this year...they look like grape clusters. When they're ready to be picked, they just fall off the bush when you touch them, so you have to be ready. I use one hand to hold whatever branch I'm working on and the other to gather the berries. There are so many I can easily pick a gallon in an  hour or less. I love blackberries too, but they are hard to pick and I'm not into getting pricked so much. We have a few, but I'm lucky to pick a quart of those a summer.....

     

    I hope you girls can get your bushes going. You will love them!

    Oh, I bet that would be great, Jet. Will you let us know how you liked it? I hope you don't have the problem with the berries sinking, Diana had a bit of trouble with the blueberries in this bread. She said it was still good, though.

    I think that if you would toss them with some flour they wouldn't sink.....I will try this week and see how it turns out...

    Diana did her original review with the blueberries on the first post about this bread, and did say that she tossed them with flour. I have also had that happen...sometimes it works and sometimes it doesn't and I don't have a clue why.  I'm glad to know that it worked with the cherries and I hope it will with your blackberries as well.  :)

    Thanks for the info  Star~   One thing too that I thik we are all missing is how good they are for you  I believe that they could be considered an excellent Kidney flusher~    I know cherries are~ 

    Before long this will be known   as  The  Gang Hanging out at   Blueberry Hill  ~  Of course that was before my time~Wink
