    I've been busy canning !!!! Here's what I have made so far.....

    In the past week I have been busy in the kitchen!!    ~Kathleen

     

    Strawberry Jalapeno Jam:

    (12) 1/2 pint jars

    (12) 4oz jars

     

    Triple Berry Jam (strawberry, raspberry & blueberry):

    (27) 1/2 pint jars

    1 pint jar

     

    Peach Jam:

    (15) 1/2 pint jars

     

    Salsa:  (I made Patti's recipe and halved it - delish!)

    (8) pint jars

     

    Oregano Peppers:  (recipe from Ray's aunt - hot peppers with garlic, oregano and oil)

    (5) pint jars

    Wow Kathleen, you have been busy!!!  It will be so nice to have all those wonderful jams to use thru the winter!

    wow, I made a lot of triple berry jam last y ear and still have some. It is wonderful!

    Doesn't it feel good to do all that?  It will all taste so good this winter!

     

    DId you use canned or fresh tomatoes in the salsa?

    I used fresh tomatoes.  I was pleasantly surprised at how easily the skins came off after a quick dunk in boiling water.  Patti, did you see, on my post with the tomato question, the remark Ray made when I asked him the same question?  I'm no cheater!!!  LOL

     

    Most of the jam I am going to give away.  I think it makes great Christmas gifts for teachers, neighbors, etc.  Not many people (around here anyway) make homemade anything so everyone always thinks it is so special, and yummy too, of course!!

     

    There are a few more things I am going to make within the next few weeks.  Dilly beans,  Brown sugar peppers, and Vinegar Pepper Rings.

    Wow Kathleen, you have been BUSY!! Homemade jams are so good!! We had been out of homemade jam for a few years, finally made some again this year, love my toast and jam in the morning!! I'd like it make almond peach jam again too.

     

    What a great idea to give them away as gifts!! Like you said very few people seem to make homemade jams, etc...

    Hi my canning queens....I just copied a few relish recipes from a Blue RIbbon article from Recipezaar.  This one for Zucchini relish looks very good and if everyone has a surplus supply of zucchini this could be a winner.

    Zucchini Relish

    6 pint jars

    10 cups grated  zucchini

    4 cups sliced onions

    3 red peppers   chopped

    3 green peppers   chopped

    2 1/4 cups vinegar

    3 cups sugar

    2 tsp. nutmeg

    2 tsp.  turmeric

    5 tsp. celery seeds

    2 tsp. peppercorn blend ground

     Place all veggies in large bowl, sprinkle with 1/4 cup salt. Let stand overnight

    Pour off water, place mixture in large kettle

    Add the rest of the ingredients and simmer on stove for 30 minutes. 

    Put in jars, either process in water bath or turn filled jars upside down

    on a towel until they seal.  

    This may not be a new one for you experts but it sounds like something I will try.  Shirley

    Kathleen, isn't amazing what a bit of boiling water does for those tomato skins? Congrats on all the canning.  You've really been busy.  I used to do more jam but either everybody is on a diet or doesn't like it anymore so I stopped, had tons just sitting around. 

     

    What are the brown sugar Peppers (think I have that right) like?  Would you mind posting the recipe when you have time?  Thanks
