    R & R~ From James Beard! Onion Sandwiches~ Talk of the Town~

    One bite from this delectable little recipe made me immediately think ~  I'd love to know the homes this recipe has been in and what company it has been with~  This is so  entertaining and if a sandwich could Glitter this would be it~  as it is dazzling with flavors and so ready to dance~ 

     Coming from James it would have to stand tall and stand out!~  A little prep work and you could have a whole plate of these ready to go ~  While the sound of eating raw onions, on bread by themselves may turn some off, I"ll just say this is a trust me~  Its only (1) slice and when it is combined with the rest of the ingredients  a very tasty Canape' is created~  I purchased a jar of artichoke spread and that is what I used in place of the mayonnaise, and I think that a lightly flavored mayonnaise would be wonderful or better yet some Boursin Cheese Spread~  I used a small glass to cut out the rounds and I had no fresh parsley or chives so I thiny sliced some scallion tops to decorate the sides of the sandwiches with~  This makes a very impressive presentation~  only thing missing is a glass of Champagne~ Drinks ~   Janie

     

     

    James Beards Onion Sandwiches

     

    8 slices of firm textured white bread, cut into quarters

     

    8 Tbs of unsalted,butter room temp

     

    1 large sweet onion, thinly sliced

     

    fleur del sel ( Course salt )  Used sea salt

     

    2 Tbs mayonnaise

     

    4 Tbs of finely miced chives or parsley

     

    Use a " glass cutter to cut out (2) small rounds from each piece of bread ( I only got (1) per slice.

     

    Spread each bread circle with (1) Tbs of the softened butter, Place a thin layer of sliced onions over the butter, season the onions with salt.  Assemble the sandwiches with the remaining bread circles,  pressing lightly to adhere.  Spread the outside of the sandwiches with some mayonnaise and roll in the chopped chives to gently cover.

     

    Serve immediately or chill wrapped well fro several hours~

     

     

     

    After typing out the recipe I ralized that I put mine together differently  I put the butter on the outside instead of the inside~  Don't think that it matters as they were delectable~  Janie

     Janie,

    I think James better step down to you. I think your idea of Boursin is so much better than his of mayonnaise, it would add so much more flavor.

    Did you use a sweet onion?

    What on unusual idea ~ this sounds perfect for Mother’s birthday…I think all the family would love it ~ light enough for a hot day on the porch overlooking the ice cold crystal clear river, thank you!

      I was so excited with this recipe that I failed to mention that I made small square ones as well and I also removed the crust~  I used a smallest  vidalia  I could find~     Hope Allie is feeling better,  I couldn't help but to think of her last night~  Dog

     Janie,

    Only my DD...She said she was enjoying it. She had taken a Vicodin (sp.?) a few hours before and was in no pain. She said she didn't feel sick at all, was getting special food, extra attention from all of us, was leisurely reading magazines and could sleep when she felt like it. Lol! I told her that is being a "princess." She took the entire week off of work, so she will be having a little vacation too.

    She did very well with the surgery and so far, has only taken one Vicodin. Her cheeks are only a little swollen so far. The most bruising will be tomorrow, but I don't think it will be bad at all. She has no bruising so far. Thank you for asking about her.

    I sure missed out on a lot of stuff on Weds. when the computer was being bad. I had a few minutes to catch up and so glad I wuz able to. Caught some of Rosie's yummy desserts too. I think our vadalia onions are gone, but we do have some nice sweet ones. Thank-you for the great rec & rev.
