Cheese filled Zucchini Appetizers
Ingredients
6 very small zuchinis, halved lenghtwise
12 -oz softened cream cheese
2 Tbs butter
1 Tbs each, sour cream and mayonnaise
Paprika, curry powder or minced herbes
Minced chives
Plunge the zucchini halves into salted boiling water, Immediately remove the pot from the stove and let stand for 8 minutes, Drain then freshen up in some cold running water. Drain well and place cut side down on paper towels.
With a small spoon, carefully cut out the centers to fom small boats with a 1/3" thick shell. Discard the pulp and seeds. Blot with paper towels and once again place upside down on some fresh paper towels to drain.
Blend the cream cheese, butter, sour cream and mayonnaise. If the filling is too moist to hold its shape when forced through a pastry tube blend in more cream cheese. Force the filling through a fluted nozzle of a pastry tube and fill thecavities of the zucchini boats. Refrigerate.
Before serving cut the boats into small pieces and sprinkle with the paprika, curry powder and minced herbs of your choice~
Variations~ Flavor the cream cheese with some blue cheese and garnish with some chpped pecans~
