    ISO recipe for noodles in peanut sauce

    Last night we were at a party where the hostess made noodles in a peanut sauce. I asked for the recipe, and she just smiled. I guess she doesn't share them.

      I did see a list of ingredients, but didn't have a chance to write them down. It included peanut butter, soy sauce, brown sugar, sesame oil and there were sliced green onions and peanuts sprinkled on top. It was delicious. I guess if I worked on it a while, I could eventually recreate the dish, but it would be great if someone had the recipe already. She said the dish could be served either hot or cold, and she was nice enough to give me some to take home at the end of the party.

    I've had it before, but never made it at home.  They are yummy ~ I'm happy to look some up online for you, but just wanted you to know that they won't be T&T by me.

    Sesame Noodles

     

    2 scallions, sliced
    1 clove of garlic
    1 teaspoon fresh ginger root
    2 tablespoons soy sauce
    1 tablespoon hot sauce
    1 tablespoon sesame oil
    1 tablespoon rice wine vinegar
    1 tablespoon granulated sugar
    1 tablespoon peanut oil
    1/3 cup chunky peanut butter
    1/3 cup sesame seeds
    1/4 cup cold water
    Fresh cilantro
    1 tablespoon chopped peanuts
    Cold cooked oriental egg noodles
    1. In a blender add scallions, garlic, fresh ginger root, soy sauce, hot sauce, sesame oil, rice wine vinegar, sugar, peanut oil, chunky peanut butter and sesame seeds and blend.
    2. Add cold water and then continue blending.
    3. Now to a large glass bowl add the cold noodles and toss with the sauce.
    4. Now garnish with julienne scallions, fresh cilantro, chopped peanuts and toss.

    Makes 2 servings.

    Noodles With Peanut Sauce


    Noodles tossed in a savory sauce made of soy sauce, peanut butter, and balsamic vinegar and topped with peanuts and scallions.


    Ingredients:

    • 1 pound of your favorite noodles or spaghetti, cooked and drained  
    • 1 Tbsp sesame oil  
    • 1/4-cup peanut butter  
    • 1 Tbsp soy sauce  
    • 2 tsp balsamic vinegar  
    • 1 tsp sugar
    • 1/8 tsp cayenne pepper  
    • 1/8-cup water  
    • 2 Tbsp peanuts, chopped  
    • 2 Tbsp scallions, chopped  

    Method

    Toss noodles, while still warm, with sesame oil. Keep warm or chill as desired. Puree remaining ingredients except peanuts and scallions in blender until smooth. Toss noodles with peanut sauce and garnish with peanuts and scallions.

    Noodles with Creamy Peanut Sauce

    1/2 cup smooth peanut butter
    1/3 cup chicken stock
    1/4 cup soy sauce
    4 tablespoons Asian sesame oil*
    2 tablespoons minced garlic
    2 tablespoons peeled and minced ginger root
    2 tablespoons sugar
    2 tablespoons red-wine vinegar
    2 teaspoons hot pepper oil*
    1/4 milk
    3 quarts water
    1 tablespoon peanut oil
    10 ounces thin Chinese egg noodles or spaghettini

    *available at Asian grocery stores

     

    In a kettle, bring 3 quarts water to boil with 1 tablespoon of the peanut oil, add the noodles, and cook them until they are just al dente. Drain them in a colander, rinse them under running cold water, and drain them well.

    In a food processor fitted with the metal blade or in a blender, blend all the ingredients

    Toss noodles with peanut sauce.
