sounds like an interesting combination! If you like pickle relish, you need to try this zucchini relish - it is totally awesome and you'll not ever buy pickle relish again.
Zucchini Relish
10 c. ground zucchini
5 c. ground onion
(I shred using the food processor)
Mix together and add 3 Tbsp. salt. Let sit in bowl in refrigerator overnight. Squeeze out water.
Bring to boil:
5 c. sugar
2 1/2 cups cider vinegar
2 Tbsp mustard seed
1 Tbsp dry mustard
2 tsp celery seed
1/2 tsp. pepper
1 Tbsp tumeric
1 Tbsp cornstarch
Add zucchini and onion mixture. Cook for 30 minutes.
Place in canning jars and seal. Process in water bath for 10 minutes each. Makes about 5 pints.
