    T&T Lemon Meringue Bars

    I am looking for a tried and true recipe for lemon meringue bars but can't find any in the search at all. i find lots of lemon bars but I need a lemon meringue bar recipe. Thank you for your recipes and any help is much appreciated.

    This is out of a Company's Coming Book.

    Lemon Smacks

    1-1/2 cups all-purpose flour

    1/2 cup brown sugar, packed

    1/2 cup butter or margarine

    2 egg yolks

    1 tsp. baking powder

    1/4 tsp. salt

     

    Lemon pie filling, your own or a mix

     

    2 egg whites

    1 cup brown sugar, packed

    Chopped walnuts (optional)

     

    Bottom Layer:

    Measure first 6 ingredients into bowl.  Mix and crumble together until mealy in texture.  Press in ungreased 9 x 9 inch pan.  Set aside.

     

    Filling:

    Spoon lemon filling over bottom layer, spreading as best you can.

     

    Top Layer:

    Beat egg whites until frothy.  Add last amount of brown sugar 1/3 at a time, beating until stiff.  If you are going to add walnuts, now is the time to fold them in.  Spread over the lemon layer.  Bake in 350° oven for about 25 minutes until light golden brown.  Cool.  Cut with hot knife, dipping knife in hot water between each cut.

    Thank you very much Nancy for the recipes. I saved them to my recipes. That baking Bites site looks really good and I saved some recipes to use later and saved the site also.
