    ANYONE OF GREEK DESCENT WHO COOKS WHOLE FISH?

    When I was in Greece several years ago we went to a taverna and had, each, a whole red snapper. I realize that here I cannot buy a fresh red snapper but I can buy them frozen. The fish had no scales and was cleaned of innards but the head and fins and tail were still on the fish. It had grill marks and the skin was quite crispy. It didn't taste of any particular spice or lemon or anything but obviously it had something other than an oil so that it wouldn't stick to the grill. I know fresh fish has a totally better flavour than a frozen fish too. But if possible I'd like to find out if it had a spice sprinkled on or in it. I'd love to try to cook a fish and try to get as close as possible to that glorious meal. Any help all you people of Greek heritage? Marlene
