    ???Can't Find Fresh Dill Heads for Canning

    I want to make Dilly Beans, can I substitute Dill Seed or Dill Weed? If so, how much would equal a head of Dill?

    Kathleen - this is what I found.  Not the best info - but better then nothing.

    You can substitute 2 to 3 tablespoons of dill seed for 4 to 6 heads of fresh dill.
    1 teaspoon dried dill = 1 tablespoon fresh dill

    My Dilly Bean recipe calls for 1/2 t of dill seeds per pint jar. I add fresh dill heads also if I have them. Works OK without them.

     I always use dill seeds instead of fresh dill. 1/2 tsp. per pint jar.
