    Rec: Raspberry Vinegar

    I've had this recipe for a while, but only recently made it for the first time.  It is very good and has a lovely deep red color

    RASPBERRY VINEGAR
    From: Canadian Living's Best Fruit, date unknown

    3 cups fresh or frozen unsweetened raspberries
    2 cups white wine vinegar
    1 Tbsp granulated sugar

    In food processor, chop together raspberries, vinegar and sugar. 
    In saucepan, heat on top of stove over medium heat for 10 minutes, or until steaming (or: place in large microwavable bowl or saucepan; cover and microwave at medium-igh (70%) for 7 minutes)
     Let cool.

    Refrigerate for 12 hours, stirring occasionally. 
    Strain through fine sieve into bowl, pressing to extract liquid.
    Discard pulp.

    Line a large sieve with double-thickness cheesecloth; place over a deep bowl.
    Pour in raspberry liquid and let stand until completely filtered - about 8 hours.

    Pour finished vinegar into a bottle; add 3 raspberries; seal with cork. 
    Store in cool, dark, dry spot.
    Makes about 2 cups.

    this sounds very good.  What would you use it for?

    Use it over a nice salad...with a little fruit , walnuts, etc. on top of the lettuce...really good
