    Mascarpone Cheesecake 

    This rich dessert is sure to delight with its creamy filling, whipped topping and sweet caramel drizzle. It makes an ideal ending to a special meal. Deanna Polito-Laughinghouse

     

     

  • 3/4 cup graham cracker crumbs
  • 3 tablespoons sugar
  • 3 tablespoons butter, melted
  • FILLING:
  • 2 packages (8 ounces each) cream cheese, softened
  • 2 cartons (8 ounces each) Mascarpone cheese
  • 1 cup sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon vanilla extract
  • 4 eggs, lightly beaten
  • TOPPING:
  • 1 envelope whipped topping mix
  • 1 tablespoon caramel ice cream topping


  • Place a greased 9-in. springform pan on a double thickness of heavy-duty foil (about 18 in. square). Securely wrap foil around pan.


        In a small bowl, combine cracker crumbs and sugar; stir in butter. Press onto the bottom of prepared pan. Place pan on a baking sheet. Bake at 325° for 10 minutes. Cool on a wire rack.


        For filling, in a large mixing bowl, beat the cheeses, sugar, lemon juice and vanilla until smooth. Add eggs; beat on low speed just until combined. Pour over crust. Place springform pan in a large baking pan; add 1 in. of hot water to larger pan.


        Bake at 325° for 50-60 minutes or until center is just set and top appears dull. Remove springform pan from water bath. Cool on a wire rack for 10 minutes. Carefully run a knife around the edge of pan to loosen; cool 1 hour longer.


        Refrigerate overnight. Remove sides of pan. Before serving, prepare topping mix according to package directions. Garnish cheesecake with whipped topping; drizzle with caramel. Refrigerate leftovers. Yield: 12 servings.

    Good morning, you feisty little lady, I also saw a pepperoni spinach quiche (great appetizer) that looks wonderful…..it was first place ~ Saturday morning your broccoli Bars are starting our day…I mean – if DH has stuck it out w/me for this long he might as well get something for his efforts….tee hee

    Good Morming ! My little "chicken" and everyone. Yesterday I messed up as usual and posted what sounds like a great blueberry recipe on the SS chat.  It was in my cookbook swap book. If someone can move it to the blueberry recipes that would be great. 

    I am a real DUMMY when it comes to computer knowledge. Guess I had better be honest, I am a real DUMMY all the time. LOL

    Pepperoni Spinach Quiche

               

    1 tube (8 ounces) refrigerated crescent rolls

    1 large sweet red pepper, chopped

    1 garlic clove, minced

    1 tablespoon olive oil

    5 eggs, lightly beaten

    1/2 cup shredded part-skim mozzarella cheese

    1/2 cup frozen chopped spinach, thawed and squeezed dry

    1/4 cup sliced pepperoni, cut into strips

    1/4 cup half-and-half cream

    2 tablespoons grated Parmesan cheese

    1 tablespoon minced fresh parsley

    1 tablespoon minced fresh basil or 1 teaspoon dried basil

    Dash pepper

     

    Separate crescent dough into eight triangles; place in an ungreased 9-in. fluted

    tart pan with removable bottom with points toward the center. Press onto the

    bottom and up the sides to form a crust; seal seams. Set aside. In a small

    skillet, saute red pepper and garlic in oil until tender. Remove from the heat.

    In another small bowl, combine the remaining ingredients; stir in red pepper

    mixture. Pour into crust. Bake at 375° for 25-30 minutes or until a knife nserted near the center comes out clean. Let stand for 5 minutes before cutting.


    Yield: 8 servings.
