    Compiling Rice Pudding Recipes

    I was browsing through the bazillion rice pudding recipes on the TOH website and most of them sound incredibly delicious. Swedish, Caramel, Mocha, German, Chocolate, Baked, Banana, Toffee, Rum Raisin, Coconut, Creamy Style, Old Fashioned Custard Style - the list goes on and on...but they are all on separate threads. Can we put them together? I would love to have a compiled thread of Rice Pudding Recipes to refer to. Can you help me out? Let's do it!!! I'll start with the Coconut recipe that I want to try first. This one was first posted by salsarose!

     

    Coconut Rice Pudding

     

    3 C Milk

    1 C Canned Coconut Milk

    1 C Sweetened Shredded Coconut

    1/2 C uncooked Rice

    2 Egg Yolks

    1 Tbsp Sugar

    1 tsp Vanilla

     

    Combine both milks, coconut and rice in a saucepan and boil over Med. high heat. Reduce heat and simmer, uncovered, stirring frequently until the rice is tender and liquid is absorbed (about 1 hour). Whisk together the yolks, sugar and vanilla in a small bowl. Stir in some of the hot rice mixture to temper. Then stir this mixture back into the hot rice pudding. Serve warm, chilled or room temp. Serves 4-6
