Twinkle introduced me to cooked wheat berries and I love them. She recently posted this recipe and I knew I had to make it. It tastes much like tabbouleh to me. I did double the amount of parsely in it and increased the amount of wheat berries, beans and tomatoes. This has a very good lemony vinaigrette. Wheat Berry & White Bean Salad (Using Hard Red Wheat)
1 Cup cooked Wheat, Hard Red Berries (1 cup hard wheat berries,
cooked)
1 Cup cooked White or Navy Beans (1 can Great Northern beans,
rinsed and drained)
1/2 Cup Green Onion, chopped
1/2 Cup Celery, sliced
1/2 Cup Tomato, diced (five 1-1/2" diameter tomatoes)
Vinaigrette Dressing:
1/2 Cup Olive Oil (6 Tbsp.)
2 Tbsp. Lemon or Lime Juice (lemon)
2 Tbsp. White Wine Vinegar
2 Tbsp. Parsley, chopped (1/4 cup, mixed with salad not in dressing)
1 Tbsp. Honey Mustard (use less next time, maybe 2 tsp.)
2 Tbsp. Shallot, minced
1/4 tsp. Sea Salt (more, to taste)
1/4 tsp. Black Pepper (Medium Grind)
Mix the vinaigrette by combining all the ingredients with a whisk or
blender. Add the salad ingredients and mix well. Let chill overnight or
for several hours to let the flavors blend. Serve chilled on a bed of
leaf lettuce.
Makes 10 servings.
