    how do you crush a garlic clove

    Separate the clove from the head.  Place the blade of a chef's knife FLAT on top of the clove.  Give it a good whack with your fist.  The skin should slip right off.  Then just smoosh the clove some more with the flat side of the blade.  Or you can chop it real fine.

    If you're doing a few to several, a tiny pinch of salt AFTER "skinning" (smacking it) will help in macerating (chop, then smear- to make a paste).  I'm a "garlic-head"- may I ask "what's cookin" ?, 'cause I smell garlic...(A dog treat ad comes to mind: Beggin' Strips-LOL)
