    Crying [:'(] R&R: Potato Gnocchi & Sausage. It's All Gone

    This was inhaled by my family and son's friend. I pretty much doubled the recipe and there isn't a drop left and there were 5 of us. DD had thirds or fourths (this was her first real meal since her wisdom teeth extraction on Wednesday though.
    I got compliments from everyone. I had some leftover oil from a jar of Giardiniera, so I used that for half the amount of butter called for. It is pretty fast to put together, another plus to this recipe. If you thought about making this recipe, go for it!

    Potato Gnocchi & Sausage
    Recipe by Dragon

    I have yet to serve this dish to anyone who doesn't ask me for the recipe. I love the blend of flavours and it is really simple and quick to prepare. A great weeknight dinner!

    Serves: 4-6

    Ingredients:

    1 18 0z package of Potato Gnocchi (32 oz.)
    3 smoked pork sausages (turkey sausage works great too), sliced (16 oz. smoked turkey sausage)
    1/4 cup of chopped onions
    1 clove of garlic, minced
    2 tablespoons of butter (2 Tbsp. oil from Giardiniera jar plus 2 Tbsp. butter)
    pinch of hot pepper flakes
    1/2 tablespoon of fresh thyme leaves (1 tsp. dried)
    1/2 tablespoon of fresh oregano, chopped (1 Tbsp.)
    1 cup of frozen peas, run under water to thaw (optional) (2 cups)
    1/4 cup of grated parmesan cheese
    salt & pepper to taste



    Directions:
    1. Prepare the gnocchi according to package instructions.

    2. While the gnocchi is cooking, heat up a skillet with 1 tablespoon of butter. Add the sausage and onions. Cook until sausage is browned and onions are soft.

    3. On medium heat, add the garlic, hot pepper flakes, thyme and oregano. Cook for 1 minute or until the garlic is softened.

    4. Drain the gnocchi, reserving a little of the cooking water. Add the gnocchi to the sausage mixture. Shake the skillet so the gnocchi doesn't stick. It is ok if the gnocchi browns a bit on the bottom.

    5. Add the peas and remaining tablespoon of butter. Salt and pepper to taste. If needed, add a little of the cooking water to thin out the sauce.

    6. Top with parmesan cheese. Let the cheese melt slightly before serving.

    I know what we are having for dinner now! I love gnocchi but can find little else to do with it other than top it with marinara and mozzarella and I am tired of that. Thanks for the post. Tina

    Jolene, I hope you had no damage. The storms this year have been so severe.

    Janie, That is one of the reasons I liked this recipe. It is so fast to put together and only has two pots to wash.

    yes,  service back on!!!!!Yes   Gm  all~Coffee  Jillie, If you can' find them I bet some Barilla Tortilla would work and they come in so many different types ~  I have tried just about every one and they all are good~   I used them mainly as appys, but they certainly would be a very nice alternative ~  Janie

     I live in an Italian community so I can get them in many forms. I use a cryovac container of them, but they also sell them frozen and dried. They would be near the pasta in the pasta aisle for dried or cryovac packed or near the ravioli if frozen.

    I use a whole wheat version but that would be more difficult to find.

    Janie, is right, tortellini would work too if they were the small ones.

    Carol and Jill, I hope you can find them. Arelene also had a recipe on the BB for them and it is supposed to be delicious.

    Chefly, I made this tonight for supper. It was wonderful. I made my own gnocchi with an instant potato recipe. Was really good. I could not find the bagged in the store.

     

    sorry, I have no clue where I got this recipe.

     

    Instant Tater Gnocchi

    1c dry instant tater flakes

    1 c boiling water

    1 egg, beaten

    1 t salt & rosemary

    1/2 pepper

    1 c flour ( add in very slowly, may not need all of it)

    Place potato flakes in bowl. Pour in boiling water; stir until blended. Let cool.

    Stir in egg, salt,rosemary and pepper. Blend in enough flour to make a fairly stiff dough. Turn dough out on a well floured board. Knead lightly.

    Divide dough in half. Shape each half into a long thin roll, the thickness of your thumb. With a knife dipped in flour, cut into small bite-size pieces.

    Place a few gnocchi in boiling water. As the gnocchi rise to the top of the pot, remove them with a slotted spoon. Repeat until all are cooked.

    These freeze well. Lay out on sheets to freeze, then bag.

    I was just looking at that recipe maybe 5 minutes ago. My family minus one brother are all getting together and my sister's new boyfriend too. He likes the way I cook and he told my sister if I am cooking he will be coming to dinner. Lol. I guess that volunteered me to cook! Anyway, I thought this recipe would be easy enough to make for the 10 of us.

    I'm glad you enjoyed it too. I bet the homemade gnocchi was so much better than the purchased. I also have that gnocchi recipe and Arlene posted it, but I still haven't made it. It is so easy for me to just purchase them pre-made. I really, really have to try Arlene's recipe. So many people, like you, have said how good it is.

    CHefly I wish I could find the premade. I would sure buy it. It is hard to find time to cook. I will look the next time I am in the city and stock up if I can find it. Dh and I thought we would love this recipe during the winter.

    I imagine your family knows they are in for a treat when you cook!

    Good luck finding the pre-made. The price varies wildly here. I can buy it at the Italian market for $1.70 a pound but in the grocery store it can cost $3.00 a pound. I can also get stuffed gnocchi like ravioli, but the price is higher, and whole wheat and whole wheat/sweet potato. I hope you can find some of the more unusual types to try.

    My family has "threatened" to stay a week at my house because of the food. Lol! My sisters can cook, but don't enjoy it the way I do.
