    Welcome to the Diabetic Connection or as we call it - the DC!!!!

     

    Our "DC" -   A place to connect with other BBer's who have diabetes and those who know or care for someone who has it.

     

    Our Purpose -    To share our stories, thoughts, questions, concerns, victories, and problems regarding the challenge of living with diabetes.

    Getting ready to enjoy this last weekend of July 2008!   I'm sure with all the heat in east and the fire and smoke in the west... we're probably all looking forward to cooler temps that some in August... and for sure September.

    Only thing today is taking Russell to the doc for help with his achey knee. His buddy, Herb, loaned him some cruthches, so he is doing better than sliding around on his office chair.

     

    Looks like I am serving coffee this morning. Bring your mug and I'll fill 'er up.

    Jenn – I hope you were able to get in to see the doctor yesterday.  I'm glad DH is starting to feel better.  How you eat can really affect how you feel.

    Mary – I bet your hummingbirds are adorable to watch.  I've heard a number of times that blueberries are so good for us.

    Nancy – You had a very light breakfast yesterday.  You are welcome for the list.  I don't increase my eating portions for quite a while now, not for another month.  But I see the doctor again in 3.5 weeks so she may change that.  Poor Russell!  I sure hope you can get him in to see the doctor today.

    Marge – It sounds like you are keeping very busy.  Enjoy your manicure.  I've only had a few in my life but I sure did enjoy them.  I agree with you – don't worry about your eating while you are on vacation.  Good luck at the yard sales.  I hope you find some really good bargains.

    Deb – I hope you find the snacking list helpful.  I do think its important to find some ways to keep your hands busy and there sure are some good ideas on the list.  I hope your knee is better when you get up this morning.  I'm glad you got some zucchini. 

    Darla – I'm sorry your lunch had to be cancelled.  I'm glad you were feeling better last evening.  I usually get sick when I take iron tablets.  Good luck with your granddaughters.  I hope everything goes okay.  That can be a handful.

    Michele – I'm glad you liked the no-snacking list.  I hope you didn't get real busy last night.

    Susan – I'm glad things got worked out with your step-dad.  I, too, pray that he doesn't suffer in pain.  You went back to work this week, right?  How is it going?  Not too stressful, I hope.  You have enough going on with your step-dad.

    Hauke – Have a good Friday.

    It's very cloudy here this morning and the humidity is creeping back up.  But the walk wasn't too bad.
    This weekend is the NASCAR race.  My brother and his family usually have a bunch of people from out of town, but my sister-in-law said they are only having 5 people come.  They are having a big party tomorrow evening, with other friends coming.  I told her I will bring my pasta salad.  Everybody loves that.  But I'm not staying for the party.  I'm going out to dinner with a friend.  But I need to run to the grocery store this morning to get the stuff for the pasta salad.
    A senior center is having a health fair this morning that is open to people of all ages.  I thought about going, but I know it will be crowded and I don't feel up to standing in lines today.

    I was up bright and early yesterday with taking our Mini Cooper BACK to the shop.  After paying all that money the window still isn't right. Yikes.  Then I talked to my friend Steph and she said she would like to be my walking buddy.  And she loves the walk to the pier.  So we went and I LOVED it.  Someone nice to talk to and a beautiful walk along the ocean. Came home and reorganized the pantry and my breakfast cupboard for new goals.  I love steelcut oats and raisens.  Son will have those this morning. 

     

     

    I found out I cannot be trusted at the Sizzler.  Everything was going well.....selection of salad items, check......low amount of carbs, check.....dressing proportion, check.......fruit instead of churros, check......then it happened, I went passed the yogurt and apple crumble.....yes, I had some......so disapointed with myself.....so only salads at home.  Then I can control better and will give myself power.....YES.   All and all I still did pretty well.  

     

     

     

    Who was it who said they feel good with eggs?  I love an egg fried in Pam and I put in on toast (no butter) , love it.  Sometimes I put a little sugar free jam on the toast.  Sounds weird, right?  But I am so in love with sweet.

     

     

     

    Today I am walking with Larry at the beach walk and we'll take Maddie.  Lots of fun.  Since his days off are rare I think we'll go to the Harbor for another walk and read our books......we love that.  

     

     

     

    Mary-I cleaned off 2 low shelves on a piece of furniture in my breakfast nook and prepared it for toys for the grands.  Went to the Childrens Orchard for some new used toys to fill up the shelves.  When the Mighty 3 get back from camping they will find them.....Can't wait.....got some great stuff. 

     

     

    Nancy-Got a kick out of your husband's mode of transportation.  Can just picture him using the office chair.  I would imagine the crutches would help.....but the office chair is way more comfortable.  lol.

     

     

     

    Joyce-love the list.....Your ok with eating out?  How do you do it when you can't eat very much?  Do you just take it home for another meal?  Which pasta salad do you make.  My family loves pasta.......never mind.....give me the recipe later......not strong enough yet....lol

     

     

     

    Deb-Late night munching has always been difficult for me but I'm hoping it will be easier this time because Larry is doing it with me.  You see, he is the one with boxes of goodies by his bed.  Yikes.  But we have been doing the sugar free popsicles instead......very cool.  He's the worst with temptations....he gets really good stuff like at the airport or the Bay area haunts.....yikes.

     

     

     

    Hauke-I know you can do this...but relax on the carbs....by this I mean figure the right amount into your diet and you won't crave them so much.....Abstinence in anything  can make you crazy......Remember longevity is the key....and weighing only once a week is the best.....YOU CAN DO IT!

     

     

     

    Michelle-Working in a hospital can be a bed of temptations....keep good treats for yourself ready so that when people bring in things that don't work with your diet you aren't going crazy.  I've been there.  When they have pot luck, bring something you really like and load up on it there.  So you feel you can socialize and still be eating, right?

     

     

     

    To all the newbies, try to lose from now til Christmas.....your blood sugar will be better and you will feel SLINKY COOL in a new outfit or an old outfit you have in your closet.  Good luck my sisters.......Robin

    I got this from a bariatric site.  Since so many are talking about blueberries, I thought I would post this recipe.  I have not tried it, but it looks good.  The notes are from the person that posted the recipe.

    Blueberry Compote

    I buy 6 pints at a time and make a large batch of this absolutely delicious no-sugar-added fruit compote.  My family loves it spooned over Breyer's No Sugar Added Vanilla Ice Cream, jell-O Sugar Free Vanilla Pudding, blended into unflavored Greek-style yogurt, or solo in a bowl with lots of Reddi Whip light whipped cream.

    2 pints fresh blueberries
    2 teaspoons fresh lemon juice (use 1 teaspoon lemon juice for each pint of blueberries)
    1 teaspoon cornstarch (use ½ teaspoon of cornstarch for each pint of blueberries)
    ½ cup Splenda granulated

    Open the plastic blueberry containers, and run plenty of water over the blueberries, allowing the water to completely drain through the holes in the bottom.

    Place the berries in a saucepan with just the water clinging to them after the quick rinse.  Add lemon juice and cook over medium heat stirring occasionally until berries release their juice, and mixture comes to a gently bubbling simmer, 12 to 15 minutes.

    Mix cornstarch and a little cold water into a slurry; blend it into the boiling mixture and stir until sauce is thick and glossy.  Remove from heat, stir in Splenda, cool slightly and transfer into a Gladware bowl to keep chilled in the refrigerator.

    Robin - I'm glad you have a walking buddy.  That will help.  And to walk to the pier sounds wonderful.  Tomorrow's dinner out will be my first real time.  I did meet a friend another time, but I brought my own food.  I'm hoping we go someplace where I can order salmon.  We had a dinner meeting at work last night and that's what I had.  It was good and I brought enough home for lunch for a few days.  The friend I'm going with had the surgery about 3 years ago, so she knows about my surgery.  I will post the pasta salad recipe separately.

    Lynne's Old Bay Pasta Salad

    1 lb. box pasta (mini penne or bowtie)
    1 cup Zesty Italian dressing
    chopped vegetables (see below)
    2 tsp Old Bay or more to taste
    2 Tablespoons Creamy French dressing
    4 Tablespoons Miracle Whip salad dressing
    1/4 cup grated Parmesan cheese
    Optional - add 1pound cooked shrimp or chicken, cut up)

    Cook 1 pound pasta (I use either mini penne or bowtie) until al dente about 9-10 minutes. Do not let get overdone.
    Drain. Toss the warm pasta with 1 cup bottled Zesty Italian dressing. Add your favorite chopped veggies. I use 3 stalks celery, 5 carrots, 1 small red onion, 1 red bell pepper, 5 radishes, 1 cucumber, broccoli flowerets. Add veggies to pasta mixture and sprinkle with 2 tsp. Old Bay Seasoning. Stir and refrigerate for several hours. Before serving mix together creamy french dressing, Miracle Whip, and Parmesan cheese. Add to pasta & vegetables. Stir to mix. If salad is too dry, add more Miracle Whip to taste. Add more Old Bay seasoning to taste. This has a tangy yet creamy taste.

    Actually I'm heading out the door to a breakfast meeting, Sure hope the café serves good coffee.  LOL  Since I'm going way over to the west end for the meeting, I have a few errands to do over there too as I don't go to that part of town.  Probably won't be home til mid or late afternoon.

     

    Joyce, I saw blueberries at Costco yesterday, didn't get any.  Now I wish I had.   Got some kiwis though and a box of oranges that look like the Christmas Japanese oranges.  They are from Peru.  Peel just like the Christmas ones, but I had one last night and thought the "orange" taste wasn't as strong as in a mandarin orange... but then, maybe it was just orange.

     

    Robin, you're up bright and early.  And giving me that kick in the ### that I need.  LOL.  Actually, when I say I'm watching carbs, it's the real sugar and white flour carbs I'm really watching.  I discovered last year that I can't eliminate carbs completely as too many of my fruits and veggies have lots of carb... and it's summer and fresh everything season... so I figure if I eat 80% raw foods - that's a lot of salads! with some proteins I will enjoy what I eat and eat healthy.    I usually avoid peas and corn as they are considered a starch for diabetics... but I'll admit, that mid August when the "corn trucks" come to town, we'll have one meal of Peaches and Cream corn on the cob... it's just too good to pass up completely.

     

    Mary, you must be having computer problems... it's not often I beat you here in the morning.   Sure hope everything is OK at your house.

    Good Morning,

    We are goingt on be on our way to Utah!!!!  for our Weekend get away!!!!!  Very exciting.  But I have a feeling something big is going to happen and I wont be home.  But I don't think it's a bad thing but it's still unnevering to have a feeling like that!!!!! 

    I forgot to make my Doctors appointment so if I remember before we leave I'll call and make the appointment.  I can never rember to call people nno matter what!

    HI Everyone,

     

      I was typing a long post this AM, hit post and my Internet Connection dropped me.  I just got back online.  Have no idea what happened, but my long post is out in Cyber Space.

     

       I love the blueberry dessert.  I bought two packs of blueberries and two strawberries today  I love that combination.  Thanks for the recipe....it sounds like a keeper.

     

      Nancy, bet you are glad Russell now has crutches instead of an office chair.!!!!!  So nasty when the knees are hurting.  Mine are somewhat better, but now my wrist is causing problems.

     

      We went to  Walmart, got the hairdo, I did groceries, which cost me a small fortune... I have lots of fresh veggies on hand now and hopefully when I do a sneak preview of my weight loss, it will show something. 

     

      I will try to get back later. If I don't, It is because I got kicked off the internet.....again!!!

    TGIF all.  Wow!!  Where did the week go?  Since I changed my workout days this week, I didnt' go today and it sure seems like a Sat instead of a Friday!!LOL  That being the case, I scrubbed the bathroom and then headed to the kitchen.  Made a big pot of vegetable beef soup, sliced and froze summer squash/zucchini, and baked a double batch of 1-2-3 graham bars(for Danny and SIL, of course).  Soup is almost ready and I'll pop some reduced fat Grand biscuits in the oven and lunch is ready.  Fresh cherries for dessert.

     

    Nancy, nice that the neighbor lent Russell some crutches.  Hope the Dr has an easy fix in mind when he sees Russell.  Thanks for the coffee.

     

    Joyce, we are supposed to get some humidity today, but it will be gone tomorrow.  Danny went out to mow about 9am and said it was so nice, but when he came in at 10:30, he said it was heating up.  Enjoy your dinner and I hope you get salmon.  That pasta recipe sure sounds good.

     

    Robin, what a GREAT coach you are.  I sure would love a walk along the ocean.  All I get here is dirt and trees.  Altho, I can walk near the little lake, and I've always enjoyed hearing the sounds of summer fun on the lake.   Don't beat yourself up for trying that dessert.  You did so well around that, it shouldn't make that big a difference.  I bet the mighty 3 will be thrilled with the new toy selection.

     

    hauke, I hope you get the things you need from the other side of town.  Hope the meeting was productive.  I don't even bother with oranges this time of year.  Sure do love the cherries and soon to come apples.   I have been trying to eat a salad for dinner at work, so I can eat a little heavier for lunch.  I am working on cutting out the eating after work, but it is hard.  I try to grab a yogurt or some cheese.

     

    Jenn, at least your "feeling" is not for doom and gloom, so hopefully, you'll enjoy your getaway.  I hope you made that Dr appt.  You know we will hound you until you get in.

     

    Mary, don't you just hate losing a post?  Almost as much as you must hate the rising prices at the grocery.LOL  Have a nice day.

     

    Darla,  so glad your tummy straightened around last night.  Your words of encouragement are so nice, and your faith sure shows through in your words.  Faith is certainly a mighty power.

     

    Slow at work last night and my knee started acting up with 3 hours to go.  Didnt' get as bad as Wed, but we were slower, so I'm not sure what is going on.  Could be the treadmill is not a good thing for me.  Will see what happens tonight since I didn't workout today. 

    Well, time to bake the biscuits and have some lunch.  Later all.

    Hi everyone.  It's a beautiful day here in northern Indiana.  We're not doing anything but being lazy around the house today.  After a bit I'm going out to investigate the garden.  We've had lots of zucchini already.  We've also had some yellow cherry tomatoes and some cucumbers as well as some early tomatoes.  The large yellow tomatoes haven't ripened yet and they're the ones I want.  I think there just might be some peppers ready today.

     

    I have another recipe to share.  This was posted over on the recipe BB by TriainAtlanta.  This is a good diet recipe and it tastes REALLY good to boot.

     

    Salmon and Mediterranean Vegetables

    1/4 cup olive oil
    8 cloves garlic, finely minced
    4 cups mixture of eggplant (quartered and sliced), zucchini (thinly sliced), and mushrooms (sliced)
    1/2 tsp. salt; 1/2 tsp. freshly ground pepper
    3 cups seeded and diced plum tomatoes (can use canned unless you have extremely good fresh tomatoes)
    1/2 tsp. orange zest (finely chopped)
    1/8 tsp. saffron; 1/4 tsp. red pepper flakes; 1/4 tsp. dried thyme, crushed; 1 tsp. fresh basil, chopped, or 1/4 tsp. dried; 3/4 tsp. fresh rosemary or 1/4 tsp. dried; 2 Tbs. fresh parsley, chopped.
    6  - 5 to 6 oz. fillets - salmon

    Heat oil in a large skillet or saute pan over medium heat. Saute garlic lightly, then add eggplant, zucchini, and mushrooms and half salt and pepper. Cook, stirring, until vegetables soften. Add tomatoes, orange zest, and remaining spices. Cook, stirring slightly, for about 5 more minutes.
    Sprinkle remaining salt and pepper on fish fillets. Layer half of the vegetable mixture in bottom of a large baking dish or pan. Place fish fillets evenly over the top of the vegetables, overlapping if necessary. Layer remaining vegetables over fish. Cover tightly and place in a COLD oven. Turn oven to 425 degrees and cook for 30 minutes. Serve over your choice of pasta or rice. I usually serve it over angel hair pasta. It is divine! This can also be made w/ sea bass. I have never served this to anyone who did not just rave over it. Don't leave out the orange zest!

     

    I have another recipe to share as well.  This is something that I made up one summer when we had lots of tomatoes that needed used up.  Our kids call this Rot Gut.  After you read the recipe you'll know why.

     

    Rot Gut

     

    1lb. ground beef

    1 lg. onion, chopped

    1 lg. green pepper, chopped

    1-2 jalapeno peppers, diced (leave in the seeds if you like the heat)

    6-10 tomatoes, peeled and chopped

    3-4 new potatoes, scrubbed and chopped into 1/2-1" cubes or 1 cup instant brown rice or 1 cup of dry pasta that you cook before adding

    salt and pepper to taste

     

    Brown the ground beef, onion, and peppers.  Drain off the fat.  Add the tomatoes and let them cook down to make some juice.  Then add the starch portion.  Simmer until everything is tender.

     

    This is really good with a crusty bread for sopping up the juices.  Since I don't eat white bread anymore I would toast a slice of whole wheat or rye and use that instead.

     

    Joyce the blueberry recipe sounds great.  We put about 8 lbs. of blueberries into the freezer 2 weeks ago so I could make this recipe all year long.  I think this would be good with cherries or peaches as well.  You would just need to adjust the cornstarch portion and the Splenda depending on the juiciness of the fruit and the tartness.

     

    Nancy I hope Russell's doctor visit went well.  I think rolling around in the office chair would be easier then using crutches but then I'm not to coordinated.

     

    Robin a little of the dessert shouldn't be to bad for your diet.  After all everything else you ate was good for you.  Your walks along the ocean sound wonderful.

     

    Hauke hope your meeting went well and that you got all of your errands done.  I'm looking forward to fall.  It and spring are my favorite times of the year.  I can handle summer but I'd like to do without winter!

     

    Jenn have a great trip to Utah.  You need to get the doctor's appointment made.

     

    Mary weren't you a day early for your WalMart trip?  I really get disgusted when a post goes into cyberspace.  I haven't had any trouble with that since I got my high speed internet.

     

    Deb it doesn't seem very humid here.  But we haven't had any rain since last Saturday.  Kenny is going to have to start watering the garden again.  You need to see someone about your knees.  Have you heard about the synvisc (sp?) shots for knees.  I think I'm going to have my right one done.  My friend, Oneda, had the shots a couple of years ago and her knee is just starting to bother her again.  My left knee was replaced 4 years ago.  The right one needs it but I'd like to delay it until I am eligible for Medicare.  My insurance won't pay for everything and right now we don't have the $$ to pay what the insurance won't pay.

     

    Guess I'd go out and look at the garden.  I'd like to find some green peppers to add to our salad for supper.

    Good Evening Everyone,

     

       Carol, thank you for the recipes!!!  I like one pot meals and would like to make more of them.  Ron is going away tomorrow AM, to a tractor show, so we got Mom all pretty a day earlier.  I have Saturday now to to some extras around the house.

     

       Nancy, how did Russell make out at the doctor for his knee???  I am glad he got crutches and I hope he doesn't have to use them long.   I am tring Advil now for my joint pains as someone told me it works pretty good....we will see.

     

     Joyce, enjoy your supper out and I hope you can get the Salmon!!!  Thank you for the recipe. I love Pasta salads.

     

      Robin, that would be so neat if we all could walk the beach with you!!!! Thank you for being such a great coach!!!!!!  What a nice surprize for the Mighty 3!!!!

    Deb, sorry you are having knee pain too.  My pain jumped to my wrist this week and boy, did that hurt!!!  My knees bother me too, especially walking up hill or in the yard.

    Evening everyone!

    Sounds like most of you had a good day. The whole week here in Ohio has been wonderful, lower temps & little humidity. Both are supposed to change this weekend.

    JOYCE: Yes, this was my first week back to work & have determined that it totally kicked my butt! My job is always high-paced. We rarely have a down time as there's always a demand for Medicaid! Adding in the others issues of my life made it even worse but I got thru it, thank God!

    ROBIN: I've not chatted with you really but wanted to congratulate you on getting a walking buddy. I would love that but none of my friends live close. The pier sounds heavenly. Never had the chance, yet, to see the ocean but would like to before it's over.

    DARLA: Thank you for the lovely e-mail. My family & I need all the help we can get thru this. Glad to hear your stomach is doing better. My husband has taken iron pills for years. When he first started on them he was warned that it could cause stomach upset. He's been lucky, so far!

    To anyone that has a garden, eat a fresh tomato for me. Tomatoes are one of my favorite foods. We don't have a really good spot to grow them in our yard, even in containers. Every place either gets too much or too little sun. I've tried probably every spot possible. We do have a market close by that has locally grown produce but they just don't seem to be the same.
