Start by making a list of all the foods that you like that you CAN have. Fresh meats, fruits and veggies. After you give your body a chance to heal more then it gets easier to try making your own Gluten free foods and try more things that you may not be usd to. I make a master Gluten Free flour blend, then just use it in place of most of my recipes. Use 3 C. Rice FLour, 2 C. Millet FLour, 1 C. Sorghum FLour, 2 C. Tapioca Starch, 1 C. Potato Starch (Not flour). HTH!
