    Embarrassed [:$] My most embarrasing cooking error yet!

    There is an elderly couple in our church, the wife has been having some health problems, and may be moving into assisted living soon.  But until then, our church will be providing them with some meals during the week.  So I was asked, and quickly agreed.  No problem!  So yesterday I make a chicken and rice casserole, along with some side dishes.  Dropped it off early, because I was going out of town for the eveing.  On our way home last night, out of the blue, it occured to me that I totally forgot to put the sauce onto the casserol!!![:'(]  Oh, I just about cried!!  All it had now, was plain rice, cubed chicken, broccolli, cheese, and buttered bread crumbs!  I know the cheese will help, but it's the sauce that makes it so yummy!  I am just so embarrassed, I can't believe I did that!  Hopefully I will see her on Sunday and profusely appologize.  Perhaps I should volunteer to do another meal next week!

     

    I do believe that is my most embarrasing cooking disaster!

    DO NOT FOGET THE SAUCE LIKE I DID!!!

     

     

    Chicken Divan

     

    2 (10oz) pkg broccoli

    2 cups cooked cubed chicken

    2 cans cream of chicken soup

    ½ cup mayonnaise

    1 tsp lemon juice

    ¼ tsp curry powder

    ½ cup shredded sharp cheese

    ½ cup soft breadcrumbs

    1 tbsp. butter, melted

     Cooked Rice (optional)

     

    In mixing bowl combine soups, mayonnaise, lemon juice, curry powder.  Lightly steam broccoli, just till slightly tender.  Place rice in casserole dish, add broccoli, then chicken.  Pour dressing over top.  Sprinkle with cheese. Combine breadcrumbs and melted butter and place on top of cheese.  Bake at 350º for 25-30 minutes.

    OH Char I'm so glad you forgot the sauce!

     

    You see - I've been looking for this recipe (a neighbor made it for me when I was really sick) and she couldn't find the recipe.  If you hadn't forgot the sauce, you wouldn't have posted about it & then someone wouldn't have asked for it & I wouldn't have it now!

     

    So see??? It's all good! Embarrassed

    Well Sstezel, I hope YOU enjoy it more then the couple did!  I just sit here just still feeling horrible!  maybe at that age your used to bland foods?  Oh well, enjoy, it is really good, and easy, love using fresh broccoli, but of course can use frozen too.

    I'm sure they enjoyed it to.  If not - they sat at the table & looked at each other & felt sorry for your DH. Wink

    They may not have even realized it was missing the sauce. Dont feel too bad,you still did a very kind thing!
